Many people buy ready made baking or cooking mixes for convenience. Some of the home made mixes contain oil and require refrigeration. Some don't have the refrigerator space, yet don't want to pay the high prices for ready made mixes.
Since winter is coming and cooler temperatures are across much of the nation, it's easier to find a cool spot to store mixes without taking up refrigerator space.
There are times you need only a small amount of an item. Other times, you may be cooking and find you don't have an item you need, and don't want to go to the store. Everyone substitutes. With income down and prices up, it's a good time to share your ideas for making your own mixes, or substituting ingredients.
How many know that in baking, 2 T. of cornstarch, or a banana in cakes, equal 1 egg? How many know that you can make most of your own mixes at far less cost than ready made? Probably most, but for those who don't, these are for you. Hope others will share their mixes and substitutes.
