[quote:Lady Jane Smith:MV8xNjg3NTczXzMzMjE2OTQ5X0RBOEEzNDM3] Pickled two batches of green tomatoes yesterday. Going to try Arnie's canned ones for the next round. My family loves fried green tomatoes, & what a nice treat for the kiddos in mid-winter! [/quote]

Green tomatoes are acidic enough to be sliced and canned, then later used for fried green tomatoes. I have ton of green tomatoes this year (brought the plants inside too many times), and I'm too lazy to make pickles or relish etc., so, just do this, it's easy !
# Slice green tomatoes into pint jars.
# Add 1/2 teaspoon salt to each jar.
# Cover with boiling water.
# Put lids on tightly and put in water bath canner.
# Bring to boil and boil for 5 minutes.
# Remove from canner, re-tighten caps and cool on counter top.
# Can also use quart jars, adding 1 teaspoon salt.
(after a day, you can remove the outer rings and test for seal, then store in a cool place)
