The Canaanites had a long history of hating and attacking Israel. They were their enemies. When God used Moses to free the Jews from Egypt, they were first attacked for no reason by the Canaanites. Jesus in Matt 15:22-26 is showing mercy and love to His enemies. He was expressing God's just state of war toward the Canaanite nation. He said what He said as a means to teach that mercy triumphs over judgment when one seeks mercy.

The Canaanites were evil and did not want to repent.

In Joshua 9, when other nations repented for their abominations they were shown mercy.

Eventually, Israel committed the same abominations and were destroyed except a remnant. God is Holy and sin must be punished but when someone does fear His justice and repents of their sin God promises mercy.

Ruth was a Canaanite as also this woman in Matt 15. They humbled themselves and were shown great mercy.

And he answered, “It is not right to take the children’s bread and throw it to the dogs.”

How can anybody believe this was the Son of God?

Even though he changed his mind, it is not believable that Son of God would not only think such a thing, he would say it.
