Why would an NK nuclear strike automatically trigger such a huge chain of nuclear responses?

Say hypothetically NK successfully nuked Seoul and USA used small enough nukes to cripple them but not big enough to send significant radiation to China. As long as the USA retaliation only affected NK would other nations really respond with nuclear weapons?

Any nuclear exchange will most probably result in a series of escalations that will spiral out of control, setting off exchanges between enemies utilizing a "use it or lose it" philosophy.  Then, there will be exchanges among the treaty allies of the relevant nuclear powers and their allies. This continues until most of the planets' nuclear weapons are exhausted. There are no "limited nuclear war" calculations.  Remember this:  Whatever can go wrong, will go wrong.  If you think that any nation can conduct limited nuclear strikes, you are DEAD wrong.
