God did it this way as a pattern for when HE created Man, in His image and how man was to keep God's pattern as man lived and worked as the image of God.

He gave all mankind a guide for proper ways to live and He gave every man the oportunity to accept Him. He gave you free will to be able to choose. Yes, He already knew what you would decide but still, He gave you the free will to make that decision.

If I or anyone on this crazy planet could explain WHY to all of these things then God would not be as nearly as great. I like a God that noone can explain. I will trust Him in that He knows what He is doing. After all, He created everything!

We've covered that... If an omnipotent being decides to create a universe an omnipotent being can do it instantly and completely by simply deciding to do it.
No effort, no construction time... a full and complete universe pops into existence at the speed of thought.

He's also omniscient which means he already knew exactly how his intended creation would look and behave for the entirety of its existence, so there's no good reason for him to fart around taking a whole week unless he's a lazy bastard.
