I've been dieting for a month now.

No soda's, no bread, no processed foods. Eating mainly fruits vegetables and some meat.

I drink water and tea with stevia--no sugars.

I'm avoided external chemicals.

I was pretty excited thinking about all the weight I would lose on this diet, but unfortunately I have only lost one pound.

I go up and down 1-2 pounds every couple of days.
Its extremely frustrating that I gave up so much food I enjoy and now eat food I don't enjoy (I'm not a big fruit and vegie lover).
I've tried days when I hardly eat at all, just an apple or slice of cantaloupe for breakfast, a light lunch--maybe a slice of ham and salad, and then no dinner --(I work nights)--I'll have a handful of trail mix before work to help the hunger pains, or a boiled egg.

On these days I will lose a pound, but the pound comes back the next day, if I try to eat a little more because I'm starving!

I want to give up, but I'll keep going, even though I'm not losing weight but because I know health wise it's better.

You need to eat more healthy fats and proteins. Cut back on the fruits and skip the trail mix. And don't starve yourself. The weight will ALWAYS come back if you continue to skip meals.
