"Fancy" ketchup is a reference to the Brix level in the ketchup, which is essentially the amount of sugar from both the tomatoes and what is added. To be considered "Fancy" the Brix level must be 65.3 or higher, which is measured by a refractometer. Most commercial bottled and packet ketchup is between 64-65 Brix. Hope this helps. |
