How is gelatin made?

A friend of mine said he visited a "gelatin factory" where he saw cow skins piled to the ceiling. The skins are left to putrefy or "cure" for about a month, during which time they're overrun by rats, mice, and insects. The stench, my friend said, is unforgettable.

After the hides are ripe, a tractor pushes them into a vat of acid that disintegrates the cow hairs, skin, cartilage, rat excrement, etc., into a nice, tasty, homogenized gel.

Can this be true? I've been fortunate enough not to have had gelatin since childhood but there are a lot of people out there trying to strengthen their nails.

Victor, what's the problem here? We're talking about a process that is the very epitome of the waste-not-want-not postindustrial ethic, whose only drawback is that it happens to be a little disgusting.

Setting aside a few gratuitous details, notably the bit about the rats, mice, and insects, your description of the gelatin-making process is reasonably close to the mark. But instead of being grossed out, you should thank God you live in a country where they've learned to harness even the humblest forms of protein for the good of ... well, if not all mankind, at least the shareholders of General Foods.

Cowhides are used for gelatin because they contain a semi-nutritious substance called collagen. They don't molder in the open air, but instead are immersed for a month in vats of lime, then dumped in acid, washed in water, and finally cooked.

Pig hides get an expedited version of this process, but the result is the same, namely a uniform proteinaceous goo. The gelatin is then filtered, dried, and shipped off for manufacture into Jell-O, marshmallows, candy, and what have you.

A considerable body of off-the-wall legend surrounds the gelatin biz. For example, I've been told that the factory where they make the gelatin for Jell-O is the only General Foods plant off-limits to the public, owing to the repulsiveness of what goes on inside.

As a matter of fact, the plant, which is located just outside Boston, isn't open to the public, but then neither are a number of other General Foods sites. The place is inspected periodically by the feds and is said to be pretty sanitary.

As for the smell ... well, the place does have a certain fragrance, the company admits. A spokesman loyally describes it as "not bad," which I suppose could mean "not bad compared to a Bolivian skunk ranch," but who knows. You want to make a midnight raid and check for yourself, be my guest

Gelatin Without BSE-Infectivity can ONLY be produced from healthy animals

The agents of scrapie and BSE are extremely resistant to physical and chemical influences. Compared with the conditions during gelatin production, in experiments they withstood an acidity, which was ten times as high, an alkaline concentration twenty times as high and a drying temperature that was about 220°C higher. As the procedures of gelatin production can not be tightened up without significant losses of yield and quality, gelatin can only be produced safely from healthy animals. In order to get a reliable test for the agent in man, animal, and raw material, it has to be shown, whether the altered prion protein is identical with the agent. Therefore a simple experiment has been proposed, by which the prion theory can be proved or refuted within a few days.

Gelatin is everywhere

Gelatin is a primary product with an extraordinary wide field of application, used for quality improvement of innumerable foodstuffs and medicaments. It serves for supplementary source of protein, carrier material, bonding agent, stabiliser and emulsifier. It is also used as an aid for frothing up, flavour enhancement, common salt replacement, clearing of drinks and as a collagen source for dietetics.

It can be found in jelly, jellied meat and aspic, in ice cream, some margarines, sweets like gummy bears, soft caramels, marshmallows, meringues, liquorice and cream-filled chocolate cakes, in gateau fillings and desserts, in milk products like yoghurt and crmes as well as in pies and convenience food. Cream and foam are often made of jelly with beaten egg white, whipped cream or cream cheese.

Try this simple experiment. Buy some unflavored unsweetened gelatin like Knox and mix it with some warm water. Then smell it
You will have your answer.

Wow, I knew it was made out of pretty gross stuff, but had no idea it was made from hides.
I always thought it was made from hoofs and stuff like that.
I figured the hides went to the Leather industry, to be turned into clothes, shoes, boots, belts.
Kinda gives me an understanding why starving Pioneers would eat their shoes and belts..apparently there is Protein in there!
I never have been a huge Jell-O person, but I do like to make homemade candy, and I have several recipes that call for plain gelatin powder....looks like they are gonna hit the trash...LOL..

I eat and like haggis. While many do eat haggis few actually enjoy it. Haggis is a dish containing sheep's 'pluck' (heart, liver and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally simmered in the animal's stomach for approximately three hours.

Gelatin making is a lot cleaner than folk would have you believe. A vat of lime is 'dead' and near sudden death for rats and insects. Some bacteria may thrive in lime, but if they thrive in lime they most likely will not do well in a 'normal' environment.

Liming hide and other things to render out its usefulness has been in practice for generations. Think Gelatin is bad, wait until you find out the process by which leather is tanned.

Back on the farm we rendered fat for tallow, and also made our own lye by the egg method from whence came our soap. We also boiled down hides for gelatin, and we also "gathered" together our own rennet for cheese making. [link to www.ask.com] We also tanned the hides, not just the occasional cow we slaughtered at home, but the smaller critters like rabbit, squirrel, deer, opossum and even a few raccoons. Oh and be the way we also ate the meat from those critters that we hunted as well.

If you are grossed out about Jello, which is far cleaner when it is packaged being sterilized via heat in the process, then please don't bother eating eggs (these are often covered in chicken poo), don't bother eating meat after all the things that we feed to the animal plus the wonderful life they spend on a stinking, rat infested, insect infested farm, or for that matter do not find out about how much bug parts are allowed in the processing of Peanut butter.

The real concern over gelatin is not how gross the process is, it's the fact that if the gelatin is made of infected cow brains and other parts then feeding that to your children could cause health issues down the line.

In more recent years the concerns about the source of the hides and other animal by-products used in gelatin have risen since the emergence of Transmissible Spongiform Encephalopathy (“TSE,”) the ‘prion disease’ that are a group of conditions that affect the nervous system of both animals and humans. “Prions” refer to an infectious agent of proteins, mainly affecting and relegated to the brain and nervous tissues. The incurable, always fatal diseases of BSE (Bovine Spongiform Encephalopathy) called ‘mad cow disease’ and the human equivalent Creutzfeldt-Jakob Disease ("CJD") belong to this TSE group. Careful consideration must be used in determining the health of the animal and thus, whether or not to use the by-products derived from it in the production of gelatin.

The emergence of BSE may have begun with just one sick cow which died and was rendered into protein slurry and fed to other cattle. This is an old and oft-used practice that is now banned in many countries. Prions (infected protein product) cannot be transmitted through the air, but it is infectious so touching or handling (as well as eating) the infected product can spread the disease. Boiling, cooking or other heat-intensive sterilization and even irradiation measures are ineffective against prion diseases. So maybe the sects that refuse to consume or use any product that contains gelatin manufacturing aid may have been right all along.

While far from being a vegetarian or even conscientious objector in principle to the eating of animal flesh, I am beginning to have a difficult time imagining ever eating Jell-O again without wondering about the safety of the animal-based gelatin used therein.
