Little Caesarīs Pizza Sauce and Dough Recipes
Little Caesarīs Pizza Sauce

1 12 ounce can Hunts tomato paste
1−1/2 cups water
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon sugar
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon Accent (optional−−−but if you want it exact, use it.)

Pre−mix the dry ingredients, mix, and set aside. In a small saucepan,
combine tomato paste and water. Over medium high heat, bring to a simmer.
Add the pre−mixed spice, stir in well. Reduce heat to low, and simmer 35−40
minutes, stirring occasionally.

Cover sauce and refrigerate until needed. Makes about 2 1/2 cups.
(4 − 12" pizzas)

16 oz High Gluten Flour (3 scoupped and leveled cups of flour)

9.7 oz Water by weight(warm 120deg. F)

2 TBS sugar

1 TBS Honey

1 Tablespoon Classico Olive Oil

2 Teaspoon Salt

1 package instant yeast

Mix flour and salt. Put yeast and half the flour in the mixer. Mix the sugar and honey into the hot water. Pour mixture into bowl and place mixer using dough hook on stir for about 2 minutes. Stop mixer. Add Olive oil and the rest of the flour, then set mixer to knead. Knead for 6 minutes stop mixer for 5 minutes then start mixer back on knead speed for 6 more minutes. If the dough is sticking to the bottom of the bowl add a tablespoon of flour or more until the dough patch beneath the ball is say the size of a silver dollar. You may need to add water. Finish knead on a lightly floured surface and shape into a ball Place in the refrigerator in a lightly sealed container coated with olive oil. for overnight up to three days.

Remove 3 hours before panning
Remove from the fridge and either divide dough in half on a slightly wet marble or counter for two 12” pizzas or leave whole for one somewhat thicker 16” pizza. Work each piece of dough into balls with wet hands.

If using screens Preheat oven to 500 deg F Mix together an equal mixture of Semolina, flour and cornmeal. Liberally coat the dough ball and marble with the mixture. Shape dough and place on pizza screen and add what you want. Cook for 6-8 minutes on lowest rack in oven and WITHOUT a pizza stone.

Papa Johnīs Pizza Sauce
1 10 3/4-ounce can of tomato puree
1/4 cup water
1 tablespoon sugar
1 teaspoon olive oil
1/4 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon oregano
1/8 teaspoon basil
1/8 teaspoon thyme
1/8 teaspoon garlic powder

1. Combine ingredients in a small saucepan over medium heat. Bring to a boil.
2. Reduce heat and simmer for 15 to 20 minutes.
Makes 1 cup.

Special Garlic Sauce
1/2 cup margarine spread
1/4 teaspoon garlic powder

1. Combine ingredients in a small bowl.
2. Microwave on 1/2 power for 20 seconds. Stir.
Makes 1/2 cup.

Iīm bored so hereīs another recipe for ya

2 cups Huntīs Angela−Mia pizza sauce (You can find this
at the wholesale shopping clubs − Samīs, BJīs, etc.)
1/4 cup water
1 1/2 teaspoons sugar
1 teaspoon ground oregano
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/8 teaspoon Accent (MSG)
1/8 teaspoon salt


In a medium saucepan, pour in Huntīs basic sauce. Add water,
and spices. Combine well, stirring over medium heat until bubbling.
Lower heat, cover, and cook 20−25 minutes, stirring occasionally.
Cool to room temperature. Store in an airtight container, refrigerated,
until needed. Makes 2 cups.
Because the sauce base comes only in large #10 size cans, store
remaining Huntīs Angela−Mia sauce in 2 one quart jars in freezer,
or fridge until you make the next batch.

my point is, the dough takes a while to rise and set itself, make your own sauce during that time

tomato sauce and paste

spices

heat real slow

the dough doesnīt raise faster by having pre-made sauce

Just trying to help people out in these trying economic times. Sure, the housing bubble may be about to cave in, the job market may be about to evaporate and who knows? Maybe planet x is about to ignite the atmosphere into one giant barbeque, but at least even the most modest household can enjoy some delicious pizza in these agonizing tribulation times. Mark of the beast? No Way! Youīll have to kill me, but at least I have enjoyed a delicious homemade Little Caesars pizza pie before you guillotine me!

I stopped by a grocery wholesaler yesterday and bought a bag of All Trumps 50121 high gluten flour. I'm going to try the Little Caesar pizza sauce recipe with it.

My small batch of dough:

3/4 cup warm water, 2 tsp sugar and package of rapid rise yeast. stir and let it foam.

Add 1 tsp salt, 1 tbsp of olive oil, stir and then add 1 cup of flour. Mix in mixer for about 4 minutes on low speed with regular mixer blade.

Let stand 20 minutes, add 1 more cup of flour and mix for 5 or 6 minutes with dough hook. If it doesn't clean the sides of the bowl, add a tablespoon of flour. Too firm? add a tablespoon of water. This is where art/skill comes in, unless you weigh your ingredients.

put it in the frig (oiled, lidded container) until later, or :
let rise til it doubles, then roll it out and sheet it. It should be enough for a 16" pie. It's best to let it rise a little more before you assemble the pizza and bake. I've been baking at 450F.

I went by Lowes and Home depot for an unglazed paver tile to use as a pizza stone, but no luck. So I bought an 18x18 travertine tile. It's too long for my oven, but when I get it trimmed to size, I'll try that. I get positive and negative reads on using a travertine tile, but I'm going to try it.

Hint: Less is more when you make a pizza. Don't put 3lbs of stuff on a pizza and expect a miracle. Keep it light.
I live back in the sticks so the only mazzarella cheese I can find is Kraft. The store brands suck.
