Why are humans the only species that drinks milk past infancy?

Are you aware that you can guess the average litter or birth number of a mammal by how many nipples the mothers have?
Elephants = 2 nipples = 1 calf Horses = 2 nipples = 1 foal Cats = 8 nipples = 4 kittens Goats = 2 nipples = 1 kid Humans = 2 nipples = 1 baby
The standard for mammals is half the number of babies as they have nipples.
There's one animal alone which deviates from this norm: The Cow. The standard bearing for cows is one calf, yet they have four nipples. Meaning that theoretically, they produce twice as much milk as necessary for the feeding and care of their offspring.
Additionally, raw cow's milk contains the enzymes that most humans require to digest the milk. Although most other milks also contain the enzymes, they taper off over time; but they remain constant in cow's milk.
Just a few things to ponder, with regards to the interaction between milk and human beans (as the AC so quaintly put it).
