It comes from in the days when the mail was carried by horse and buggy, they would hire someone to protect them.
Hence riding shotgun

They used to sell piglets in tiny little boxes. This effectively hid the pig, so if you wanted to get a living on, you had to poke it through the slats to see if it was alive.

These tiny boxes became known as "pokes", and to get taken by getting something of poor quality for the price of something of good quality, is considered "a pig in a poke".
