Good for you. I hate to sew, but I do love to do other things. I love crafts, I made curtains for my entire house with a glue gun! I also recovered two god awful ugly chairs to match the drapes in the sitting room. Lately I have been into making glass fused jewelry. One of my favorite things to do is take old crappy furniture that is on the side of the road and paint it to make it look like what you see on the caribbean islands.

Dinner tonight
Baked Salmon with mascarpone cheese and sliced almonds
Sauteed small red yellow, orange, red peppers with red onion and mushrooms. Sprinkled with Mediterarnean fetta
Baked potato

Ingredients
Salmon
small pack of mascarpone cheese (refrigerated section )
small bag sliced almonds
Mixture of peppers
mushrooms
small 1/4 of an onion chopped
potato
Sea salt
Pepper
salt pepper lemon
oregano
Sour cream or Greek yogurt
butter
Feta cheese mixture Mediterarnean

Pre heat oven 350
Spread enough mascarpone on Salmon to cover top of fish completely
Sprinkle on almonds and press into fish
Put in small metal pan
cook for about 18-24 minutes or until fish falls apart when a fork is inserted

While fish is cooking
Puncture potato several times rub with butter and cook in microwave for about 3-4 minutes until cooked through, Cut top in cross, squish in sides and put pat of butter, sprinkle with salt and pepper and dollop with sour cream or yogurt.

Cut up veggies and saute in olive oil, sprinkle in spices until slightly soft and onion is translucent. Serve with sprinkled on feta

I am just a mom :) I love to cook and sew and can. I find great joy in feeding people and making them smile :) A good meal is something that seems to have gotten lost with the crazy life styles people have. What people do not understand is you can save money by eating in and not out. Make your own basics and grow as much as you can or buy from
local growers. Thank you :)

I get these ready to cook tortillas at Costco warehouse store, which are really good. I had those, and pizza sauce and cheese this weekend to use up, so I made pizzadillas. I cooked the tortillas first in the pan as directed, but not too crunchy, then I spread the pizza sauce thinly on each tortilla, put one down on the pan, sprinkled the mozzarella and whatever, like my one son wanted sliced olives, then I put the other tortilla on top, sauce side down, and cooked, then flipped, and cut like a pizza. They couldn't get enough of them!

Ingredients

1 teaspoon olive oil
1 sweet medium onion chopped
2 cloves roasted garlic mashed
1 cup uncooked white rice
1 1/2 cups chicken stock ( I use mine)
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
3 1/2 cups soaked black beans, drained

In a stockpot heat the oil and add onion and garlic and saute for 5 minutes or until onion is clear and starts to caramelize. Add in beans and broth stock, bring to a boil, cover and lower the heat and cook for 20 to 25 minutes. Add in all the spices and rice simmer on low another 20 minutes until rice is done.

Chicken with Alfredo sauce over angel hair pasta and Italian salad
Chicken tenderloins about 8-10 or 2 chicken breasts sliced into strips
8 oz marscapone cheese
Mushrooms
1/2 stick butter
8 oz heavy whipping cream
1 cup Parmesan cheese
garlic
salt and pepper
Olive oil

Pan saute chicken sprinkled in garlic salt and pepper in some butter and olive oil. Put aside on a plate. In pan melt butter, add in marscapone cheese and blend. Add Cream, Parmesan cheese and season with garlic (I prefer fresh roasted but you may use dried or chopped) salt (sea salt preferred but you may use regular) and pepper If you want you can also add about 1/4 cup of white wine. Cook over stove top until slightly thickened. add chicken and simmer on low. It is finished within 10-15 minutes.

In pot boil angel hair pasta until finished and strain. I like to toss in a little olive oil and spices.

Serve chicken in sauce over pasta

Salad
Mixture of baby greens
candied walnuts
Tomatoes
Avacado
Onion
artichoke hearts ( cut up)
Italian cheese blend grated Asiago, Parmesan , Mozzarella , provolone
Lemon juice
salt pepper garlic oregano
Olive oil

Toss all ingredients except last 3
Mix lemon juice and olive oil with spices and drizzle over salad

I was lazy tonight and needed warmth and energy so mine was rather high fat, but it was good. 8) Had Amish Fried Chicken and fried potatoes in butter with a salad with fresh tomatoes, peppers, cucumbers, lettuce and ranch dressing.

Amish Fried Chicken
1/3 cup vegetable oil
1/3 cup butter
1 cup all-purpose flour
1 teaspoon salt
2 teaspoons black pepper
2 teaspoons paprika
1 teaspoon garlic salt
1 teaspoon dried marjoram
10 pieces of chicken


1. Place oil and butter in a shallow cooking pan and place in 375F oven to melt butter, set aside.
2. In a large paper sack, combine dry ingredients.
3. Roll the chicken pieces, 3 at a time, in butter and oil then drop into a sack and shake to cover.
4. Place on a plate until all pieces are coated.
5. Leave any excess butter and oil in pan.
6. Place chicken in the pan skin side down (or its just as good if you remove all the skin first).
7. Bake at 375F for 45 minutes.
8. Turn chicken pieces over and bake 5 to 10 minutes longer or until crust begins to bubble.

It's a gloomy, gray day here, and taco's sound good. Have a few beans left over from some bean soup, so I'll mash and fry them. Might smear it on the bottom of the taco shell, or just eat them on the side. Taco's become rather special when you make your own. Much better than the drive thru window. 8)

Maybe while the shell mix is resting, I'll cook a little basmati rice in chicken broth to got with it. Toss is some slivered almonds and sprinkle with a little parsley, and it'll be good.

Taco Shells (tortillas)
2 c white flour
1 1/2 t. baking powder
1 t salt
2 T veg oil (I use lard)
3/4 c warm water (I use broth)

mix the dry ingredients very well, put the oil and water in a cup. slowly add the liquid a few table spoons at a time into the dry and keep mixing with a fork real well with each addition. when all the liquid is added you have a mass of kinda sticky dough. dust counter with flour and knead 2 minutes, put in bowl and cover with damp towel for 20 minutes.

take dough out and pinch off 8 golf ball size balls

cover and let rest 10 minutes

take a golf ball and flatten out with palm of hand

use rolling pin and starting from the center roll out to edge and turn to roll out all edges. dough will 'creep' back but keep rolling to get as thin as you can.

Cook on hot griddle...cast iron is great. Lightly oil if needed. Turn when bubble forms on side or when lightly browned. Doesn't need much cooking at tall. Leftover shells can be eaten with any lunch meat, egg salad, peanut butter, a breakfast tortilla, or individually frozen (so they don't stick together), bagged and kept in freezer for future use.


Taco Seasoning Mix
Spoon 1 tablespoon of minced dried onions in a small bowl or cup.
Add 2 teaspoons of chili powder.
Add 1 1/2 teaspoons of salt.
Add 1 teaspoon of garlic powder.
Add 1 teaspoon of cornstarch.
Add 1 teaspoon of ground cumin.
Add 1/2 to 1 teaspoon cayenne pepper or hot paprika.
Stir to blend.

Fry ground beef, add seasoning, put on shell, top with lettuce, cabbage, tomatoes, onions, cheese, or whatever you like.

This is just a hobby. I have cooked since I was about 6 and taught classes when I was in High school :) I have never been trained ..I just love to cook :) The Beef wellington is one of my favorites! My sons love it with Bearnaise and asparagus :) It really is not very difficult to make :) My eldest son is going to go to culinary school after his BA in business. He would like to open a restaurant one day :)

Cowboy pork chops:

Layer onions, sliced about 3/4 inch thick.

Potatoes, sliced about 3/4 inch thick.

Top off with pork chops.

Add some chicken or beef broth, about a cup.

Top the whole thing with a good layer of BBQ sauce.

Bake on 400 for about an hour!

People that don't usually like BBQ sauce can't believe this tastes so good. You can also add some peppers if you like.
