Does anyone have any easy recipes for cooking fish while camping? I am going on a kayaking trip this weekend and am going to east some of what I catch, but will not have things like butter with me. I have a small herb garden, so I plan on taking some thyme, oregano, rosemary, etc and putting them in the fish and cooking the fish in aluminum foil over some hot coals. Maybe I'll take a lemon as well. Any suggestions, tips, or recipes would be greatly appreciated!

Put it on the top shelf of the dishwasher and run the dry cycle, perfect fish every time.I love kayaking too, I am envyous of you getting to have so much fun. At home cut up the potatoes in really small cubes like 1/2 inch and the onions and throw them in a ziplog with olive oil and your herbs. When you get the camp just put it together with the aluminum foil

The Asian Beef marinade sounds good. Something along that line sounded good to me today so I fixed Orange Chicken and put it over rice and had green beans and carrots with it. Think it would have been perfect if I'd added some snow peas, but I used broccoli instead.

Mixed a cup of water with a half cup of orange juice. Grated about a Tablespoon of the orange peel for zest, added a dash of rice vinegar, a couple T. spoons of soy sauce and heated.

Then I added a cup of brown sugar a little ginger, a little garlic, a chopped green onion and a few pepper flakes. When that was mixed, I added a few water chestnuts and little broccoli pieces.

Then I put the cubed chicken pieces in a baggie with flour and corn starch and browned it in a little olive oil.

When browned, I drained it, wiped out the remaining oil, and put the sauce with a couple T. spoons of corn starch over the chicken.

I simmered it until thick, about 5 min. or so, then put it over rice.

It's better if you marinade the chicken in part of the sauce, but I was hungry and didn't want to wait. 8)

I haven't been cooking much this summer as the kids are all over the place and I never know who will be eating here so I've just had some easy to fix stuff on hand that I can toss together whenever and this is one of those type recipes. School starts next week here already(!) so I'll be planning regular meals again and will share some more recipes that involve actual cooking, but for now...

Here's an easy, yummy meal we enjoy. Nothing fancy and you wouldn't want it everyday as I'm sure it's not the healthiest meal ever, but it is very tasty, quick to put together and filling.


Oven Baked Chili Dogs

1 Package Hot Dogs
1 Package Hot Dog Buns
1 16 oz Can of Chili (i use Hormel w/ beans)
1 cup or so of Shredded Cheddar Cheese
1 handful French's Onions (like in the green bean casserole)
some Mayo for spreading

Heat oven to 350.

Spread Mayo inside hot dog buns on both sides. I know that sounds strange but trust me.
Put a hot dog in each bun and place each in 13x9 pan. It will be crowded, but they should all fit.
Spoon the entire can of canned chili over the top, then the shredded cheese and then top with the fried onions. Try to get into the buns a little, but it's ok if it's on top.

Cover with foil (try not to have it resting on the top of the food so the cheese doesn't stick) and bake for 45 minutes.

You'll need a fork to eat these! I usually serve with something light on the side like apple slices or veggies & dip.

Yum. The buns get a kind of crunchy, chewy texture from the mayo and then all the melty chili cheese goodness... mmm. They are also good leftovers!

Note: Some recipes call for also adding sweet relish and/or mustard when you spread on the mayo, but I haven't tried it that way since I know my kids wouldn't eat it.
