Ingredients
1 large green bell pepper
12 jalapeno peppers
1 1/2 cups apple cider vinegar
1 pinch salt
4 1/4 cups granulated sugar
4 ounces liquid pectin
4 jalapeno peppers, seeded and finely chopped

Directions
1.Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
2.Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.
3.Return the liquid to the saucepan, and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When the mixture comes to a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.
4.Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken


I left some of the seeds in for extra Flava!!!!

This made about 5-6 of the small jars!

It's not that hot! It's pretty good. I like mild spice and this has just the right taste to it.
You could probably alter it a bit to your taste!

I went back and did not see my post on TG's thread! I must have hit the wrong button. I'm so sorry about that! I'm bout worn out. Headed south to the beach in about 4 hours. Better get to bed!

Sorry, maybe I missed it? I had some dental work done and it really knocked me down. She lives here in town still, her husband has been based in South Korea for the last year. We are glad he will be going to a base where they can live together, but sad it is so far away. I worry about tornadoes, earthquakes, and all the other stuff a GLP mom knows about. Her husband is a great guy, they have been best friends since she was 15 years old (she is 22 now) so at least we know him really well. I swear that boy has eaten more meals at our dinner table than with his own family! Nice thing, he still calls our dinner table "home".

My guys like caesar salad, and asked to have one for dinner tonight. I usually use the bottled kind, but we were all out. So, I looked through some old recipes, and found one that I tweeked a little. Best stuff I ever tried

Awesome OG!! I wanted a ceasar recipe, my kids love ceasar salad!

Today my daughter had a BBQ for her birthday and we served a veggie tray with the blue cheese recipe and the home made ranch I also made with the buttermilk, everyone loved it.

I also made my famous potato salad, and its all gone! Its really good, but I dont make it often cause its SOOO fattening and cholesterol ridden, we jokingly call it heart attack in a bowl.

I only make if for large gatherings cause leftovers wouldnt be good, its to hard to resist and eating more than a serving or two probably wouldnt be good to do.

It is cold and rainey here in sunny socal so I am making chicken soup.

1 whole chicken ( buy when on sale and freeze if you don't use right away - frozen chicken is better for soup than a fresh one). If you use a frozen bird do not thaw just put it in the pot frozen.

Cover your bird with water. Sometimes I add 1/4 to 1/2 bottle Sierra Nevada beer.

Add Spices: Cumin - teaspoon or two if you like, Turmic same amount or more depending on your taste, Iodized Sea Salt, cayenne pepper to taste, fresh ground black pepper, ground chili spice or Chipolte chili (I like teaspoon or two), paprika (shake it in there to where you have a nice color from it). If you have fresh hot peppers around or have a tree chop one of those up and throw it in the pot. Garlic to taste. You can add Rosemary too if you wish. Sometimes I do and sometime I don't. One big handful to half a bunch of fresh parsley/italian parsley chopped and include stems.

Vegtables: Carrots, one or two sweet onions (cut in big bite size pieces) or green onions (you can also do both), one leek (cut in nice bite pieces). One bunch of kale, chopped or torn and thrown in. You can also chop the stems and put them in. Optional is red cabbage. Sometimes I do and sometimes I don't.

Bring bird and spices to a boil, let boil for an hour or a little less, keep covered and lower heat and add carrots for another hour, third hour add half of the kale, parsley and onions. I like to cook my soup for 3 to 4 hours. So add the rest of the veggies about 30 minutes (or less if you like them aldente) before serving.

I made some of my canned chicken soup for my husband today, and this is the first jar that I have opened from canning it last year.

It loses a little something in the canning process, it actually tasted "processed". I was a little let down about that.

2 lbs sliced baby portabella mushrooms
2 large sweet onions, sliced and quartered
2 Tbsp Extra Virgin Olive Oil
3 Tbsp real butter
2 Tbsp Worcestershire sauce
Juice from 1 lime
1/4 tsp granulated garlic, or mince 1 clove
Sea salt and fresh ground black pepper

Heat olive oil and butter in pan until butter is melted. Add remaining ingredients. Sautee until onions are soft and mushrooms start to brown. Serve over steak or baked potatoes.

We had these tonight over grilled serloin and ribeye steaks with baked potatoes and salad. It was soooo awesome!

Thought I'd share a family favorite, a desert bread I make.
It's not really bread, but sweet quick bread, easy to make. I can throw it together in a few hours if I'm getting company.

Zucchini Bread

2 cups sugar
1 cup oil
3 eggs
1 tsp vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
2 cups shredded zucchini
1 cup chopped nuts

Mix all together. Put in well greased large loaf pan. Bake at 350 degrees for about an hour. I check it about 50 min. and bake however longer it needs. You need a long tester to check for doneness in the middle.

It's good when you eat it with a little oven heat, but I serve it to company at room temp with butter or cream cheese on it.
