This recipe is SO EASY and SO freaking awesome you won't believe it!


SHRIMP AND CORN CHOWDER
1 tbsp. butter
1/4 c. chopped green onion
1 clove garlic, minced
1/8 tsp. pepper
2 cans cream of potato soup, undiluted
2 c. milk
1 (3 oz.) pkg. cream cheese, softened
1 can (8 3/4 oz.) corn, undrained
1-1/2 lbs. shrimp, peeled and deveined
Melt butter in large Dutch oven; add onion, garlic and pepper. Saute until tender. Stir in soup, milk, cream cheese and corn. Bring to a boil, stirring occasionally. Add shrimp, then cover and reduce heat; cook 5-7 minutes. Serve hot.

I make it in a regular stock pot, and add less shrimp. If you like spice, add cayenne pepper. French bread and salad and you're happy for hours.

Andean Potato Cakes with Peanut Sauce
serves 2

2 large potatoes, grated
1/2 large onion, chopped very fine
1 egg
salt and pepper
mix together
fry in coconut oil

Sauce
1/2 large onion, minced
2 cloves pressed garlic
1T coconut oil
3T canned diced tomatoes
1/2 cup juice from canned tomatoes
1/4 cup peanut butter mixed with 1/2 cup hot water
salt and pepper to taste
1/4 - 1/2 tsp cayenne pepper
saute onion and garlic in oil until soft, add the rest of the ingredients and cook on med-low while potatoes are frying.

Spicy Greens and Okra
couple handfuls of okra, chopped
1 large diced onion
olive oil
2 cloves crushed garlic
1T chopped jalapenos
salt and pepper to taste
big mess of swiss chard or spinach (wash carefully)
cook everything except the greens until tender, add greens and cook just till wilted

Here's one of the BEST tips I've ever found...

When making burger patties, make a thumbprint in the center of one side- then grill. Perfect, evenly cooked med-rare burgers from center to edges :)

Christmas Morning Cinnamon Rolls

18 Rhodes frozen dinner rolls
1 Cube Butter
1/2 cup brown sugar
1 tsp vanilla
1-2 tsp cinnamon
1 box jello butterscotch pudding (the kind that has to cook)

Place the rolls in a bundt pan, or oversized disposable loaf pan. Melt butter and mix in brown sugar, vanilla, and cinnamon. Pour butter mixture over frozen rolls. Sprinkle pudding mix over the top. Cover loosely with foil and let rise on the counter overnight. Remove foil and bake at 350 degrees for 30 minutes or so. Invert pan onto serving plate and enjoy.

Tonight we're having couscous with roasted cashews, Rosemary/Orange zest sauteed kale (lots of garlic, too), and a spicy mango and honey shrimp.

Dessert is an experiment of creamed frozen bananas with a peanut butter/fudge swirl.

Speaking of deer, I saw one today just running down the road right towards me. She stopped and looked and decided to run behind my car. It was a busy road and she looked stressed, like she was lost. So sad. Then she almost got hit.

I made these cookies over the weekend and they were a big hit.

Easy-to-make.

Even though the recipe calls for some organic ingredients, I used regular all-purpose flour and Kroger brand oatmeal.

For the chocolate bits, I used Ghirardelli semi-sweet bits.

The recipe made about 16 large, delicious cookies!

1 can enchalida sauce
1 pound hamburger
bunch of american cheese slices

cook meat add cans melt cheese on top,eat
it is really good

Bell Pepper Relish Chicken in the Bag

4-6 pcs fresh chicken, washed thoroughly and dried
1 package McCormick original chicken seasoning with the bag/tie
1 small carton fresh sliced mushrooms
1/2 cup water
2 large green peppers, seeded and chopped coarsely
1 large onion, peeled and chopped
1 jar Marzettis zesty bell pepper relish, (in the pickle aisle)

In a 13 x 9 baking dish, open the bag and put in all your chicken pcs. Add all your veggies, the whole jar of relish, and the 1/2 cup of water along with the seasoning mix that comes with the bag. Tie the bag up tight and smoosh everything up in the bag to get it all coated and distributed evenly.
Lay the bag in the baking dish or pan and pierce the bag with 4 small slits to let steam escape.

Put it in a 350 oven for 1 hour.

Fix some sides and whatever you want to drink and you're good to go! Enjoy!

Have you checked out the Dehydrate2Store web site? I learned a lot about dehydrating from her videos. You can even take a bags of frozen vegetables and dehydrate them right out of the bag since they're already prepped. I've dehydrated lots of vegetables for soups. Also dehydrated lemons, mango, potatoes, tomatoes, green peppers, onions...

I use Alton Brown's recipe for dehydrating deer meat. Yours sounds really good, though.

I tried a reuben quesadilla today. Oil bottoms and tops of tortillas. Saute onions in a little oil, add sauer kraut and cook for about 8 minutes. Layer tortillos with swiss cheese, corned beef, sauer kraut, cheese, corned beef, sauer kraut. Heat in oven on 375 degrees for about 10 minutes. I added Thousand Island dressing as well.
