I need to do more research. So far wildflower honey makes the best mead in my opinion. Mesquite honey is ok, but forget the orange blossom or clover honey Thoughts make things. |

Sterilize, warm honey up so it flows, put into carboy, add water to about an inch below the neck. Keep everything sterile that you touch and do not let fruitflies into it once mixed with water. I use the sterilized carboy cleaning brush to mix the honey and water and oxygenate it good. Add happy(live or activated) yeast, put a water lock(ventable) on that bad boy and wait a month. Make sure everything is lukewarm, even the room, too cold and fermentation could screw up, too hot you kill your yeast Thoughts make things. |

When I lived up north we used to make a wine from "Gaultheria procumbens" winter green or some people call them tea berries. They are found in most northern forest. Crush 1 qt berries, add 1 gallon of H2O, add yeast. Let sit in cool dark spot for 30 days. Strain out pulp. Note: There are some mild halucingenic effects with this brew. |
