We make our own wine and beer at home, however most of it is from kits. We are also looking at ways of making it from "scratch". It does sound complicated at first, but if you are familiar with the process of making beer or wine it may not seem to daunting. TRADITIONAL RECIPE FOR HEATHER WINE/ALE 1 ½Ibs. Heather Tips (in full bloom) 1 Gallon water 3-4 lbs. Sugar (according to sweetness desired) 2 Lemons 2 Oranges 1 teasp. dried yeast 1 teasp. yeast nutrient. Cover heather with the water and boil for one hour. Strain off liquid and measure. Restore to one gallon, and add sugar. Stir until completely dissolved. When the temperature drops to 70F, add yeast and nutrient. Leave for 14 days. Then strain into fermentation jar, and when fermentation ceases, strain and bottle. Keep for at least six months! Heather Ale has a light taste but is really yummy! I first tried it at a WINE AND CHEESE SHOW haha. GOod Stuff. You can buy it at a liquor store I believe.. in the Specialty Beer sections. It's a swell wine in that it has alcohol and is cheap. This is my happening and it freaks me out! |

What you need: - a 5 lb bag of sugar - a can of malt syrup (big can) - 5 packs of yeast (any will do) - a 5 gal bucket - a cheesecloth (or an old towel) What you do: Take your 5 gal bucket and add the sugar, malt syrup and yeast. Fill 3/4 full with water. Stir well. Tie cheesecloth on top of bucket and put the bucket somewhere dark and room temperature. In two weeks, take off the cheesecloth and have a look. Should be foamy and smell like beer. Filter through fine cheesecloth in order to get rid of remaining yeast particles. Refrigerate in sealed containers. Should taste a bit like Old Milwaukee. Gets you drunk as shit. Note - You'll probably never get out all the yeast particles so let the brew separate and then siphon off the clear, golden top portion. |

When balloon goes limp it is ready to drink. I'm making 16 gallons of perry this year this way. I am also using honey and or brown sugar for variety. Would green "Granny Smith" apples be the best idea? The sweeter the apple the more sugar for fermentation. If you want a dry sour hard cider, granny smith would suffice. I prefer sweet. I use whatever is available and mix. My fist batch was about 3/4 Red Delicious and 1/4 Johnathan. Very sweet and made very hard cider. |

My parents have a few apple trees , choke cherries trees and red currant bushes.. the dears have a feast. |

If you want to go really cheap.. 4 cups sugar 1 packet Yeast (any) Put it in a clean gallon milk jug, fill with water, shake it up and then either leave the lid unscrewed just enough for it to breathe or poke some holes in a balloon and put it over the seal. Let it sit 3-4 weeks. This makes decent super cheap sugar wine, ..tastes great with Kool-Aid and does the trick. Doomsday alcohol FTW! This is my happening and it freaks me out! |
