just pulled four loaves out...butter..warm....total time 15 minutes and 40 to cook

Peter Reinhart's
"Whole Grain Breads"
Ten speed press

for all you with gluten problems hers a book that has great recipes for making bread's with ancient grains.
3 day process using simple steps.
preferments the grains and use's yugurt as part of a three part process,... for those with gluten problems know that baking with these harder grains and getting good structure is hard work usually. spelt kamut etc...don't tend to make fluffy bread easily.
I can't eat most breads so this is a great book for me
...sorry no recipes but he's worked hard to put this book together and its really really worth the read to understand what hes doing with the artisan breads and the price to support him. i paid 35.00 for its and worth every penny...

you know, I don't like chewy crusty bread - not this artisan that's hard as a rock on the outside. This artisan style bread is all over now. I even got some at the Food Bank. It's bread for people who don't know how to make bread or appreciate good bread. Nothing personal, just my opinion. Would love to see more recipes posted though! ;)

I have been making this bread for years

from this NYT recipe

it's great bread

I also like to do batter breads--those are quick and easy

and instant

beer batter is great and takes the flavor of the beer you use

I have made beer bread in a coffee can, so hard on the outside that it took a chisel to open, but the inside was so worth it! I will try this one too. Not everyone can afford to be so picky...and if the inside is wonderful, then the outside might be good for crutons or even the birds!

really wierd.. after sharing this with my wife, on a cooking show here in aus.. no word of a lie, about an hour ago, they showed the same method.. but using commercial bread mix.... GRIN.. GLPers will be getting their bread for about 1/10 of the price.....

that is a pretty damn long time to wait for a piece of bread... just sayin'

if i knead it can i eat it quicker??? if so, what exactly is 'knead'? I heard the expression once while driving through amish country, but...1dunno1

Yes, if you're willing to add less water and more yeast and knead the dough, you can eat it in a little over 2 hours. This is the recipe I first started with and will be my SHTF dough because of it's lack of ingredients + time. I do have a Kitchenaid mixer that I've decided to put to use though, and now do a variation of this recipe a few different ways but I add more yeast (rapid rise) along with some sugar to help speed the process along, and do not add as much water. The texture of the bread is a bit different though, but still absolutely wonderful!

I also add oil to my recipe, as the downside to this original is that even if you seal it, it will dry out very fast and become as hard as a rock.

that's how we make bush damper in aus in the outback... we could even use damp bark, or tinfoil in a stretch.. and cover it in the coals.. gets a bit burnt... but sorta adds to the flavour after scraping with a pocket knife....

Making some bread now, maybe I'll try and get a Photobucket account to upload some pics. I do a loose variation of this recipe but it only takes 2 hours to rise then about another 30 min or so to cook.

This is just pure laziness.

If you want nice chewy bread, then the kneading is an ESSENTIAL part of the process.

1/4 tsp. of yeast is going to taste pretty much like a cracker.
