People were thin back then and had better cardiovascular health. But the soy industry needed consumers for their "vegetable" oil. So they demonized saturated fats in order to create demand for "home grown" crops as palm and coconut oils are almost exclusively imported. How can a fat that melts at 76 degrees be considered a saturated fat? It is a medium chain fatty acid. I only use coconut oil, olive oil, and butter. Sometimes corn oil.
