Kroger meat is poison
I bought a 2lb roast a Kroger last night. It was really red when I bought it, but I wasn't able to go too a different store. I refuse to buy their ground meat. So I buy the roasts and grind it myself. Anyways, it was unnaturally red. Even as I was grinding it, it was getting redder. I called their meat department and spoke with the manager. He told me "when it is exposed to oxygen it gets brighter and redder." To which I replied, I am a chef sir, I know that is completely false. When meat is exposed to oxygen it should get darker and browner. He tried to argue back, but I shut him down. I then asked what chemical they spray on it to get it that color. He said they do nothing, that their suppliers may, but he does not know.
The only problem I have with this is, that I once bought 2lbs of ground beef from them, I went home and cut it in half. I was going to store half and use half. When I cut it, the entire center was very brown and smelled off, but the outside was as bright as a fresh ground meat. I have since refused to buy ground from them ever again. My question is, does anyone know what they are spraying on their meat? They keep their meat department in the back so no one can see.
Has anyone else had this problem? And, are they doing this at store level or is it suppliers?

I shop at Kroger, have for over 20 years, and never had a problem...they are more expensive than Wal-Mart, but I wouldn't even buy a wooden pencil from Wal-Mart...

It's some sort of die, and I forget the name of it. It's also used in pork. What I do remember is that it takes out the oxygen from your own cells.

I am sorry I don't remember right now. It's information from a book I read on canning your own meats and why.

I wish I could tell you more but this is a start, hope it helps.

Carbon-Monoxide-Treated Meat

They use a variety of things to keep the meat looking "good"...from red dye's to spraying blood over it to using carbon-monoxide to treat the meats.

I wish i could find the website that had all sorts of info about this and other foods but i cant remember the url.

And when it is exposed to oxygen it gets pinker, but I then looked up Myoglobin and found that through artificial carbon monoxide processes this meat can stay pink for up to a year. Find a non-chain market that sells meat. Get a pack from major chains and compare it to the non-chain meat. I've found that in most instances there's a difference right off... when you open a pack of local non-chain meat, there's a healthy meat smell, no dark purple diseased meat hiding in the middle of ground chuck, the color uniform and not pieced together or glued to sell. From a chain store, the first impression is raw ammonia that dissipates quickly, bad spots on the meat, hidden until you open it, weird shit in the middle of ground meat I wouldn't feed my dogs. If you have a local market that's under the "food club" chain, the meat will most likely be a local source. Drive around til you find one, help a struggling independent owner out, eat a decent steak and don't feed the chains that bind us with their pretty poison :)

Manipulating food with very active chemicals has gotten big in the past decade. The USDA & FDA require labelling of just about none of it.

I don't eat meat fom stores like Kroger anymore.

the "brown" in the middle is nothing new.... its called "older" meat and they are getting rid of "inventory". no offense but all grocery stores have been guilty of this for the last 40 something yrs, i remember noticing this as a kid.

that you claim to be a chef and this is the first time you noticed it makes me wonder what your game really is. seems to be a concerted effort recently in the media to demonized red meat. red meat is great for a person's neurotransmitters.... it acts to 'satiate' the mind.

Yeah the usda is in on the entire thing any ways.

Here is a 1 hour documentary called Food, Inc. Its really good and talks about this very thing your asking along with all sorts of other deceptive practices that go on with the food industry.

I stopped buying Kroger meat a long time ago. It is often too old and is not "CHOICE" grade. I drive extra miles to a country market where they still have quality and will grind the meat for free! Better prices for much better meat, and service, too. I can't believe more people haven't wised up.........

It's so hard to know these days OP. I live an a small town with 2 stores. I don't buy steak often, but the times I have, our Stater Bros. market sells a prepackaged, delicious looking steak. I got home to find it was green on the other side. I drove all the way back and told the guy I want another one. He told me the lights make it that way. I say but it was on the flip side? Ya....he said, the lights do that. Then he said and just because it's green doesn't mean it tastes bad. I held the steak up and said I wanted both sides to match. This has happened several times so I no longer buy meat there. I have complained to mgt. and they stop it for awhile...then it's back to biz as usual. Buyer beware these days.....

I usually buy meat at a better grocery store but this past month I bought some burgers at walmart , they were the worst burgers I ever ate. It tasted like they put sawdust in them. They were tough and un-chewable, was like they ground up a leather belt. I eat very little meat as I can't afford it anymore but I will never again buy their burgers, my guess is that they are adding something unchewable to the ground meat.

If you have to buy meat at kroger, purchase the organic meat line that they offer. It is a little better but more pricey as well.

Even the produce at walmart is nasty. It is a very low grade. I try never to shop at walmart. Their meat is not that cheap either.

Just an observation. We buy meat all the time from Kroger, and try and save as much as possible by buying anything that has been marked down, or reduced. Sometimes it's a little brown, and may even have a slight smell (not bad). Now, I can honestly say we have never gotten sick from anything we have gotten there. My brother is a naturalist, and they are in town, and we have been talking about it. He kills and cures his own meat, and says that they sometimes come across meat that has a slight odor, but still eat it. His thoughts are that we have become so accustomed to antibiotics for every little cold, that our bodies cannot handle even the smallest amount of bacteria. He and his kids, along with my family, have sworn off using any form of antibiotics, for almost 15 years. Both our families have not had hardly any colds, or other problems from not taking them, and are healthier than we ever have been. We have gone all natural as far as remedies. I think of how our ancestors survived without all the BS we put in our bodies, and it stands to reason that your body builds up its own defenses over time. So if SHTF, we should be able to survive without needing a lot of the modern medicines. Now if you get sick from something you bought at the store, do as everyone else does, sue.
