I went to a Golden Coral once.. out of town with "cousins".

If you have to buy meat at kroger, purchase the organic meat line that they offer. It is a little better but more pricey as well.

Even the produce at walmart is nasty. It is a very low grade. I try never to shop at walmart. Their meat is not that cheap either.

I am also one of those unworthy and reluctant meat eaters. I like mostly chicken and fish and not a whole lot of red meat but when I have it it MUST be well done, almost to a crisp, no fat, nothing gross on it.

I shop mostly at Kroger myself but since the meat pink jelly stuff came out I've switched to getting all my meat, produce and dairy from the Mexican meat market store. It's a meat market, with butchers and all and you can definitely taste the difference.

Ground beef gets brown in the middle very fast. Thats just because it can't get any air. You can make it 30 min. Later it will be brown in the middle. All of the pre-packed meats have those chemicals in them. So u guys need to find the butchers that still cut the meat not the pre-packed meats . You can also ask your butcher to grind you some fresh ground beef . That should solve the brown in the middle problem.

Kroger red meat is sold within 30 days of production. If the meat dries out it oxidizes and turns bright red. Just as your teeth turn bright white when they dry out at the dentist. The discoloration on the underside of steaks is caused by the laying agains the plastic on the soaker pad just as if you peel of the sticker on top of the meat wrap there is a little discoloration. Steaks discolor if you lay them on top of each other hence the use of peach paper. Discoloration in the center of grinds is caused by heat from the grinder blade. If its pre package from a plant they do thousands of pounds at a time. Even in a controlled cold climate the grinder head and auger still heat up by friction. Store ground beef is done in smaller quantities hence better look. Aged beef is more tender 30 - 45 days old but does not keep appearance for a 4 day shelf life. The meat is not bad just but knowledgable about what you buy.

Went in and bought some meat for the grill yesterday, it was the managers special but it looked nice, felt right, and labeled Choice so I took a chance.

OMFG, that was the worst meat I have had in quite a few years. When I put it on the grill the red immediately brightened, even after I flipped it to check the other side I could still see the red.

Finally when I cut into it the meat had a red layer as if it had a smoke ring (the red ring that you get when you smoke meat over many hours) and no, 20 minutes on the grill wouldn't have done that.

In the end it had a funny taste and I threw it out. They certainly had enough room to label it 'choice' (it definitely was no higher than select)

Okay, so here is my question. Aren't you supposed to label your food with all ingredients? What if someone was allergic to red dye?

I bought a 2lb roast a Kroger last night. It was really red when I bought it, but I wasn't able to go too a different store. I refuse to buy their ground meat. So I buy the roasts and grind it myself. Anyways, it was unnaturally red. Even as I was grinding it, it was getting redder. I called their meat department and spoke with the manager. He told me "when it is exposed to oxygen it gets brighter and redder." To which I replied, I am a chef sir, I know that is completely false. When meat is exposed to oxygen it should get darker and browner. He tried to argue back, but I shut him down. I then asked what chemical they spray on it to get it that color. He said they do nothing, that their suppliers may, but he does not know.
The only problem I have with this is, that I once bought 2lbs of ground beef from them, I went home and cut it in half. I was going to store half and use half. When I cut it, the entire center was very brown and smelled off, but the outside was as bright as a fresh ground meat. I have since refused to buy ground from them ever again. My question is, does anyone know what they are spraying on their meat? They keep their meat department in the back so no one can see.
Has anyone else had this problem? And, are they doing this at store level or is it suppliers?

Carbon-Monoxide-Treated Meat

They use a variety of things to keep the meat looking "good"...from red dye's to spraying blood over it to using carbon-monoxide to treat the meats.

I wish i could find the website that had all sorts of info about this and other foods but i cant remember the url.

Never buy the ground meat in the tubes only stay with the pre wrapped packages. The color of meat does change to red when exposed to oxygen. To answer your why did it get even more red after opening is easy. The packages are loaded with small amount of CO2 and a pad to absorb any left over oxygen from the meat is placed underneath it. So therefore when you remove the meat from its packaging the oxygen turns the meat bright red. As far as dark brown that is not something to be cooking or eating. This would mean that you are taking risks of being exposed to ecoli. However some meats are aged at particular butcher shops with a dark red color which is safe for cooking. Be safe and remember all meats are to be considered as toxic even when you are at home. Wash your hands before handling and ckean up any blood spilled. Never let children or anybody near your workstation for preping your meat for cooking.

sorry i have no answer what is being put in the meat to keep it red , but I found this out about 12 years ago buying meat from walmart in which I no longer shop. I warned everyone I knew back then and still today to stay away from. I wasn't aware that krogers NOW is treating there meat the same way now. I guess it's finally caught up to them now.

12 years ago I bought ground beef from walmart to make grilled burgers. I took half of what I bought and put it away in the frig. not in the freezer. I had forgotten about the meat the next day to put it in the freezer. Well I worked out of town for 2 weeks and off for 2 weeks. I was away for 2 weeks when I returned I was looking for somwthing to cook up and notice that I had forgotten the ground beef I bought 3 weeks past. I was shocked to see that the meat was still BRIGHT RED !! Like the day I bought it.I called walmart to find out what did they put in there meat and never got an answer.
ahhh
Needless to say 12 years ago was the last time I shopped at walmart.

Find a grassfed organically raised beed supplier and buy from them. Local if possible.

Problem solved. That's what I do.

My dinner tonight was broccoli I grew myself and a grassfed porterhouse. Outstanding! Leftovers to work tomorrow. While coworkers chow on frozen "dinners" I'll be heating my steak and broccoli in the toaster oven... mmmmmmmm

I am increasingly convinced that almost ALL meat is toxic or somewhat poisonous because:

Animals are being injected or fed substances that stay in the meat and effect consumers.

The meat is becoming contaminated with bacteria and foreign substances in the butchering, processing, packaging, shipping and handling process.

Animals are consuming toxic substances from feed or from the enviornment, even the air itself.

Good point and I agree. People do forget to put a reasonable value on their time - which is the one thing none of us living on earth has enough of. I know how it is when you live far from town or from the store where you got a bad piece of meat but to me, I'd rather just phone and give them hell - it's happened before. It has probably happened to all of us at least once. All of them will let you just bring your receipt and the empty package back in for a replacement. No store ever asked for the meat back:) You can't take chances with a funny-smelling piece of chicken.

I'm sure the dog is fine. I've had dogs long enough to know they'll eat some things I don't even want to see and that I know wouldn't do me any good if I tried to follow their example. Yuck. Dogs can even eat cat turds and not even get indigestion but, if a packaged piece of meat didn't look fit for me, on principle, I'd toss it before trying to feed it to them. A rotten carcass from out here in the country is ordinary enough, but a chemical-laden piece of bad meat from the store just isn't right.
