(can use spices to taste-chilpolte, etc)
to make paste
(some people add nutritional yeast)

spread on Kale leaf. 3 Walnuts on top and fold. Eat like a pizza.

I did this to get healthy and I felt better but I was trying to lose some weight and never lost a pound being Vegan (and gluten free). I had to get creative but it was costing more than I usually wanted to spend at the time so after 6 weeks I started other plans.

Been back on track (mostly) the past couple of months. Self-diagnosed, non-celiac intolerance. When i eat wheat, i pay a price. I don't find it very hard to stick to at home, its when i go out n'about or at others'. The pasta is great (corn/rice blend is my fave), cereals are fine, the bread lacks texture but one does get used to it eventually. Longest i've stuck to it completely is 4-5mths at a time, been on & off it for 2-3 yrs now. Good luck!

nice, i am glad to hear that. i am at the point in my life where i feel the need to get back into working on my physical fitness and my eating habits need to improve. health wise i am fine and at 32, 40 pounds under weight. that weight, height chart is a load of crap. i am 5'8 and 122 pounds and have been for the past 12 years. i think this is my natural build but i would love to put on an additional 20 pounds so i can match bruce lee at a comfortable 5'8 142 pounds.

it is tough to make the switch isn't it. the longest i can go at this time is 2-3 months doing the vegan thing. it makes me feel incredible but god damn, i love cheeseburgers and not that processed fast food garbage. i am talking grass fed and organic as can be.

I was considering going gluten-free, but it seems like I can't find products that contain fiber. I think getting fiber from foods naturally wards of serious diseases. So I'm weary of a gluten-free diet.

Yup, and it's so worth it. I had really severe symptoms of gluten intolerance before I finally figured out what was happening.

I actually will bake sweet/fruit breads, cookies, etc. with my GF flour mixture, and people rave about how much better it tastes to them than the usual wheat that is used. I like to get the brown rice tortillas at Trader Joe's and make little pizzas and stuff with them. I have figured out how to make any recipe that requires flour using my GF flour. Just add a bit of xanthan gum and a bit of gelatin to replace the stickiness of the gluten, and it's good. It's harder to make a loaf of actual, fluffy bread like in the stores. I get my ingredients for the flour from a combination of the store, Amazon.com, and VitaCost.com. Things like Millet Flour, Corn Starch, Potato Starch, Sorghum Flour, Rice Flour, all mixed together. There are several options to choose from to mix together to make your flour blend for baking. The GF bread still comes out a bit heavier and more crumbly. I instead make this type of heavy, pretzel-bread. Sort of looks like a flat french roll or something, and I put some parmesan and salt on the top before baking, good with soup. Wheat products can hide, in ingredients like "food starch", and soy sauce, teriyaki sauce, orzo, cous cous, etc. I always ask if sauces are made with wheat or corn starch, when I'm out. I seem to be able to cheat just a little at times, but not much or it gets bad. I even begin to sneeze if I open something like a box of mac n cheese for my son and the wheat pasta dust hits my nose, lol. My sister and a lot of my mom's cousins do GF, too. One of my favorite GF items is ground almond flour, which I season and use to bread pork chops - so delicious!

Yes, you can't go nuts with the breads and pastas. I don't use very much of them, so I guess it doesn't matter so much. The bread/carb component of my diet reduced a lot with the GF diet. I do like to snack on organic blue corn chips with flax or sesame, or brown rice chips, etc., at times, when I need a carb fix. Plain white rice flour pastas are not so good for you, but the brown rice kind is a much healthier choice because you get the advantage of what's in the whole grains. I cook mine and put on fresh tomatoes, blanched zucchini, and grated parmesan with a bit of butter and pink or grey salt. That's about 2-3 times a month, though.

I didn't know that the GF diet was good for that. Here's something I found about the diet, albeit not very detailed:

A balanced diet that includes high quality proteins such as fish and chicken cannot be emphasized enough when it comes to thyroid health. In the case of Hashimoto’s Thyroiditis and thyroid conditions in general, the better the quality of food the healthier the thyroid gland will be. Overly processed foods such as refined sugars and flour should be avoided as much as possible. Cruciferous vegetables such as broccoli and kale are said to slow down thyroid function; therefore it is a good idea to limit consumption of these foods.
