In Genesis 1:28 (KJV) it says: "........ Be fruitful, and multiply, and replenish the earth, and subdue it:..."

There's a lot going on in that verse. REPLENISH the earth???? What does the word 'replenish' actually mean?

Replenish = to fill up again; to restore to the FORMER level or condition; to RE-PEOPLE!!

What did "God" do to the earth and its people that he gives the command to REPLENISH it?

THINK PEOPLE!!!Dammit - THINK!!!

Then it goes on to say that our Earthly Mother needs to be SUBDUED! What does 'subdue' actually mean?

Subdue = Overcome or bring under control; to bring under control by physical FORCE.

Wouldn't a caring, loving god tell the people to honor and respect Mother Earth and take care of Her? What kind of god tells the people (indirectly) to rape and plunder Mother Earth (subdue)?

'Replenish' means just that - to replenish what was destroyed in the upheaval of the the first earth age. Using the same souls (but different bodies) as in the first age.

The Bible does not refer to earth as mother earth. (You made that up) The earth is not out mother.
God created this earth and He plans to renew it at the end of this (second) age.
We can do NOTHING to harm it that God can not repair.

The Bible works just fine as words, no need to play it like it's ingenious matrix opresses faithful people who can't decode it, and locks them out of the loop.
The more you indulge, the more you volunteer. If your going to talk the talk, God is going to ask you to walk the walk, or your hypocracy will be your downfall.
It also works good as a dead weight to smash someone over the head with, but that doesn't make it right, even if they deserve it.

that scripture was likely meant to tell people to become many, which has been accomplished, fertilise the earth, possibly meaning our flesh or poop, and control food acquisition through farming.
