I just run the tomatoes thru it, and add dried spices and dried onions and dried peppers to the mix and boil it for 10 minutes, hot pack it into quarts, and put in a boiling water bath for 40 minutes. |

Dip a pillow case of tomatoes for 3 min in boiling water, then 3 in cold water, core it, with a paring knife at the top of the tomato put the skin between your thumb and the knife and pull down. Fast and easy. |

Because my uses are mainly for diced tomatoes for chili, spaghetti, and tomato juice. The skin will peel off of the diced tomatoes whenever they're put into chili and it's not at all pleasant.
