I just run the tomatoes thru it, and add dried spices and dried onions and dried peppers to the mix and boil it for 10 minutes, hot pack it into quarts, and put in a boiling water bath for 40 minutes.

I use the tomato peels to mix in with my meatloaf, along with plenty of onions, wheat bran, eggs and olive oil.

You have to if you want whole tomatoes for soup or macaroni. Just make sure you do it with big tomatoes and use the littler one for juicing.

With a good sharp knife and practice you can learn how to deskin a tomato, just like removing the skin from fish. Bell Peppers, too. This is so very much faster than peeling, and you can still have chunks of tomato instead of mooshed.

Because my uses are mainly for diced tomatoes for chili, spaghetti, and tomato juice.

The skin will peel off of the diced tomatoes whenever they're put into chili and it's not at all pleasant. They have a texture that you'd have to sample to understand, but once you did, you wouldn't want it again. 8)

Not too hard for me. It goes very fast. In fact, I started doing it this way because I just really dislike dealing with the hot water bath method. Too messy, to timely for me.
