I would appreciate any advice on stretching a small amount of food for a month. This may seem impossible when you read what I have to work with but I believe in miracles.

This is my situation...

I live in a transitional living facility of 8 apartments.

Most of these people have some type of physical disability or suffer from depression and they do not take good care of themselves when it comes to eating.

I believe God is using me to help them. I have witnessed incredible miracles occur in their lives just 6 weeks in knowing and helping them.

The little money I have had has been stretched to amazing heights. I transport them to doctor visits, the grocery store, etc. daily and always have just enough gas to get them to their destination and back again.

I have recently spent $80 of my food stamp money on basic foods and have been cooking them meals because most are unhealthy. I am particularly concerned with an 8 1/2 month pregnant woman who is not eating right- not because she doesn't want to but because she was never taught proper nutrition.

Yesterday I was blessed with a church offering me 12 loafs of day-old bakery bread and some eggs. I can NOT waste this food.

The majority of my life I was financially well-off and I never had to worry about not having food.

Can anyone give me suggestions on how to best use the following items as well as how to properly store them (such as freezing) so as not to waste one ounce?

Remember, this food MUST last clear through September because it's all I have to offer them until I get $80 more food in October.

The $80 I used apparently was NOT well spent because I am running out of food in just 5 days. It included items such as milk, butter, hamburger (stretched VERY thin), dried pasta and bread.

Because my pantry of such items as olive oil, vinegar, condiments, spices, etc. was stolen during my move here I don't have much to flavor the foods I prepare other than salt, pepper, mustard and mayonnaise.

I feel I should use whatever money I can scrape together to buy things to flavor the food so that it's pleasurable for them to eat.

This food will be used to feed two fifty year old men, two forty year old women, two thirty year old women (one pregnant), a three year old girl, a seven year old boy, and two seventy year old women. There are 10 total excluding me.

I can exist on a sandwich a day but the other residents are larger than me. And the children are active.

I would SO appreciate any creative suggestions. I just know God will come through for us and I thank you for helping me with your suggestions so that I can continue helping them.

They are really wonderful people. They've just fallen through the cracks and have no-one in their lives to care for them.

Items I have on hand:

3 lbs frozen navy beans
10 lbs potatoes
1 lb pinto beans
48 eggs
8 cups of breakfast corn flakes
2 lbs of white rice
4 cans of green beans
2 cans of peaches
2 onions
1 small can of tuna
1 large bag of egg noodles
2 boxes of Macaroni and Cheese
3 sticks of butter

Jar of ketchup
Jar of mayonnaise
Salt
Pepper

I buy whole milk and water it down to two gallons. Rice is very cheap as well as dried beans. Good luck to you. I know that soap isn't food related but we still have to wash our clothes. Been buying a large jug of off-brand of Dawn (next to the real thing at Wmart) and use approx 2 tsp to a very large load of farm/very dirty clothes. Works just fine. Use less for regular clothes.
Sometimes apple orchards have less than perfect apples for much cheaper. Great taste, just not pretty.

your starving yourself on 1 sandwich a day so u can feed over 10 people? get ready to get malnourished pretty quick,they get their own foodstamps, your worried cuz they dont eat healthy? that means they ARE eating,u dont think eating 1 sandwich a day is unhealthy?? why are u being a maryter? just give them the directions to the food pantry so they can supplement their own foodstamps for gosh sakes! teach them to fend for themselves,thats the best thing you can do for them.

don't buy meat, or bread or pasta----no nutrition

buy brown rice and lentils/peas, beans----this will give you a full compliment of protein enzymes, fibre and a good amount of nutrition

generally food nowadays is very poor----to combat this consume power house nutrients by making smoothies.

a smoothie for everybody each mourning.--even if its a small amount each, that will work


buy some whey, spirlinina, a real coconut,, any discounted fruit at the store.

poke a hole in the coconut and drain liquid---thats goes in your smoothie the first day---smash the coconut on concrete and get about 10 pieces out of it---this will be used for 10 days of smoothies.


the spirinilla and whey split up the containers to stretch them out for 2 or 3 months of smoothies




so its one big smoothie a day with a little of this power house nutrients in them---a little goes a long way

check out other essential fats and powerhouse nutrients to rotate into your smoothies.

for example---buy in quantity---you geta better price per unit.
buy a big amount of flax seed and grind up a 1/8 cup or so to put in smoothies

pick berries--wild greens----read up --the info is out there

grow a wall garden for greens--I did---I throw a bowl full of leaves in everyday for my families smoothies---no cost.

remember to change up the ingrediants often


try pea protein powder or you can buy a huge bag of dried peas and grind it to add to smothies for protein.

stay away from all soya


and my best advice is make sauer kraut---cheap and a very big bang for your buck---just cabbage and Celtic sea salt.
fermented foods is much needed in everybodies diet.

fermented foods have a higher nutritionial content then the original content.


and THE MOST IMPORTANT thing is to tun to Jesus Christ--he will give you direction--answers.

Here's what I would make:

Navy Bean Soup with green beans & half an onion

Pinto beans with rice and 1/2 an onion

Mac & Cheese casserole with Tuna and crushed Corn Flakes on top

Lots of French Toast

Fried Potatoes and onions with ketchup

Buttered Noodles

Egg Casserole

Peach Crisp or Cobbler

Bread Pudding

Then repeat the next week. Freeze anything that is leftover

Bean soup flavored with some onion, and a side of nice thick cut buttery toast for dipping! Also, to stretch the tuna, use double as many boiled eggs to make an egg/tuna salad sandwiches. (also add eggs to your potato salad or you could make a pasta salad with tuna and some eggs in it. Instead of using hamburger, I have found that ground turkey is less expensive and is less fattening ( I love it) it tastes very similar too.... I would try to go to every food pantry in your area, many will give food on the spot after the proper paperwork. Keep up the good work you are blessed. If you can try to get some peanut butter and jelly that goes a long way, provides it all: protein, fat, carbs, even a little fruit juice, and sucrose. You can always make bean salads too if you get a little creative.

Do these other people get food stamps too? If not, they should apply for them and you can get more that way.

Also, almost all areas have food banks. Find out where yours are and go there and bring all 10 people with you so they can each get a box for themselves.

Find out if you have a bakery outlet near you, we have one here that sell the day old bread and baked goods for 1/3rd retail price. I got 2 loaves of bread for $1.00 the other day, everything is really cheap at the bakery outlet stores.

Bread + eggs = French Toast, you just need syrup

Spaghetti should not cost more then $1.00 a box and cheap sauce $1.00 a jar and it's filling, cheap and goes a long way.

Check with the local low budged food stores, like Save A Lot or something similar and see if they sell "Utility potatoes".

Here you can get 20lbs for $4.50. That's a steal! They are just not perfectly shaped, but who cares!

Call around and see if any of your local stores sell utility potatoes.


Check out the Dollar Stores in your area and see if they carry grocery items, I shop at dollar stores alot.

Miggy, call a wholesale food company, like MacDonald's Consolidated (supplier to Safeway's) or similar and ask to speak with the produce buyer, tell him your story and ask if they have any products to help you out.

I work for a supplier like this and the food bank gets product weekly from us.

If you are unsure where to call, just call a major grocery store and ask them who their grocery supplier is.

make one smoothie the way i describe above by using 6 oz of water per person times total people and adding said nutrients.
and divide it up between everybody.

1/10 of a coconut in one smoothie divided up for all the people is going to do them a lot of good.

All I can recommend is that you do not use the rice and beans separately, but combine them. Rice is a good carb, and beans have protein, but only vegetable protein. Combined they act in synergy to produce a dish that is filling but also provides complete protein as would a meat dish.

IF you have any baggies ( plastic) ) I recently read how eggs, beaten, and places in baggies CAN be frozen and used later when thawed out. Think about WHAT you a going to use them for ( i.e. 2 in a cake, 4 scrambled, etc. ) and bag accordingly.

MUST admit I haven't thawed any out and used them, as they are for when TSHF, lol ! Racks of Ruck !

When the cupboard is bare, try the Stone Soup approach.

When you see your neighbors, tell them you are making a big pot of soup, and ask them if there anything they would like to add to it.



STONE SOUP

Some travelers come to a village, carrying nothing more than an empty cooking pot. Upon their arrival, the villagers are unwilling to share any of their food stores with the hungry travelers.

Then the travelers go to a stream and fill the pot with water, drop a large stone in it, and place it over a fire. One of the villagers becomes curious and asks what they are doing.

The travelers answer that they are making "stone soup", which tastes wonderful, although it still needs a little bit of garnish to improve the flavor, which they are missing.

The villager does not mind parting with a few carrots to help them out, so that gets added to the soup. Find a store that sells all types of legumes including beans, in bulk such as the super pail size sold by Emergency Essentials, which will cheaply meet the bulk of protein requirements.

For breakfast look into their rolled oats and other grains and this should free up limited resources for fresh vegetables and other necessary items.
