You say the people all live in apartments and I would reckon the majority if not ALL of them get food stamps and have food in their apartments. It is RIDICULOUS that you would try to have us believe you are responsible for feeding all of those people on $80 of your OWN.

Miggy, I sure hope you can get some food donations for all you are doing!

French toast for the eggs/bread. I'm not sure, maybe you can make this up and freeze it, might be worth trying a small batch.

Yes, casseroles, as someone said.

Also, you can make savory bread puddings, too.

You can make hamburger stretch further by adding oatmeal to the meat and mixing it in to make it go further..makes it not only go further but the oatmeal is good for you.

Dont know if it helps, but a good way to make hamburger meat go further is to mix it with bread (and belive it or not stale bread works best). Old italian trick. Mush it up real well. The bread acts as a filler and furthens your yield.

You can make syrup by purchasing a flavoring ...like maple syrup flavoring ..and buy sugar ..add the water and sugar together ...add the maple syrup flavoring...boil it down until it gets thicker..
Makes good pancake syrup, if done right.

Also, contact your local grocers, explain your situation, and often times as long as you prove your working for a charitable association alot of times theyll donate you "last chance" foods (stuff that will either need to be cooked right away or frozen to last). More often then notgrocery stores throw away dumpsters full of foods that are still totally ediable. There was a documentry about it on netflix but i cant recall the name of it now...

I would appreciate any advice on stretching a small amount of food for a month. This may seem impossible when you read what I have to work with but I believe in miracles.

This is my situation...

I live in a transitional living facility of 8 apartments.

Most of these people have some type of physical disability or suffer from depression and they do not take good care of themselves when it comes to eating.

I believe God is using me to help them. I have witnessed incredible miracles occur in their lives just 6 weeks in knowing and helping them.

The little money I have had has been stretched to amazing heights. I transport them to doctor visits, the grocery store, etc. daily and always have just enough gas to get them to their destination and back again.

I have recently spent $80 of my food stamp money on basic foods and have been cooking them meals because most are unhealthy. I am particularly concerned with an 8 1/2 month pregnant woman who is not eating right- not because she doesn't want to but because she was never taught proper nutrition.

Yesterday I was blessed with a church offering me 12 loafs of day-old bakery bread and some eggs. I can NOT waste this food.

The majority of my life I was financially well-off and I never had to worry about not having food.

Can anyone give me suggestions on how to best use the following items as well as how to properly store them (such as freezing) so as not to waste one ounce?

Remember, this food MUST last clear through September because it's all I have to offer them until I get $80 more food in October.

The $80 I used apparently was NOT well spent because I am running out of food in just 5 days. It included items such as milk, butter, hamburger (stretched VERY thin), dried pasta and bread.

Because my pantry of such items as olive oil, vinegar, condiments, spices, etc. was stolen during my move here I don't have much to flavor the foods I prepare other than salt, pepper, mustard and mayonnaise.

I feel I should use whatever money I can scrape together to buy things to flavor the food so that it's pleasurable for them to eat.

This food will be used to feed two fifty year old men, two forty year old women, two thirty year old women (one pregnant), a three year old girl, a seven year old boy, and two seventy year old women. There are 10 total excluding me.

I can exist on a sandwich a day but the other residents are larger than me. And the children are active.

I would SO appreciate any creative suggestions. I just know God will come through for us and I thank you for helping me with your suggestions so that I can continue helping them.

They are really wonderful people. They've just fallen through the cracks and have no-one in their lives to care for them.

Items I have on hand:

3 lbs frozen navy beans
10 lbs potatoes
1 lb pinto beans
48 eggs
8 cups of breakfast corn flakes
2 lbs of white rice
4 cans of green beans
2 cans of peaches
2 onions
1 small can of tuna
1 large bag of egg noodles
2 boxes of Macaroni and Cheese
3 sticks of butter

Jar of ketchup
Jar of mayonnaise
Salt
Pepper

Resturants throw so much food away, sad isn't it? Knock on doors..The people you are helping must get some money for essentials!! Group together and do not bear all of this on yourself..work as a team.

Also, to make fresh milk go further..you can buy some Milkman or powdered milk of any kind..you take a gallon of whole milk..pour half of it into an empty gallon milk jug...make up a gallon of powdered milk in another container..pour half the powdered milk in with the whole milk ...it mixes with the whole milk..and as long as you can collect some empty gallon milk jugs..you can double the milk quantity this way..and it doesn't have the powdered milk taste either..tastes like 2 percent milk.

Doubles the milk on hand.

You can do much with this food but you don't have time to learn to cook. I'm thinking french toast with the peaches and syrup from the can chopped up and warmed with one stick of butter. Potatoes go well with onions and scrambled eggs. Beans and rice. You could use more rice. Tuna noodles with the green beans added, crush the corn flakes and sprinkle on top. Needs a cheese cream sauce and seasoning. Would be better with green peas.

visit churches, food banks, and make a local appeal through your personal network for additional supplies. forage for eatable plants, visit restaurants and grocers for out of date and discarded food items. catch some fish and check with local hunters for protein items. may sound weird at first but you can add sawdust to flour to stretch it. commercial bakers do it and it's legal, they call it plant fiber or veg fiber. seek out a source of edible clay. add salt and veg shorting and leave out in the sun to dry. cookies made this way taste bland and make you thirsty but it beats starving.

my advice is timing:

a good protein breakfast ( like scrambled eggs )

a smaller lunch

try to have dinner not too late -

AND THEN GO TO BED.

Sleep controls leptin, which controls appetite.

Tiredness makes you want to eat for a pick-me-up.
And you don't want late-night snacks if you are asleep.

You are right, it is a shame the very people who need to save money on food do not know how to cook.

Rice and beans, always good too.

There are churches that have food banks that give to the needy, My Mom has been giving food out for 15 plus years, All you have to do is sigh a one paper form giving your social security number and how many people in the family,

She died last year and my step-dad gave up his church due to health and age,

I can remember when she went to the main facility where you purchase everything, I couldn't wait until she got home, I would always go through and pick me a few items,

Call the local chamber of congress close to you and get the phone numbers, Don't be ashamed or embarressed, These are church folks and give with Love

Put an ad on craigslist requesting people's extra garden produce. It's fall, so many people will have extra squash, tomatoes, and apples that they will be more then happy to give away to a good cause.


Also, have you considered sprouting? A 1/4 of a cup of lentils will make a whole quart of healthy lentil sprouts in about 5 days. All you need is a container that you rinse them out twice a day and a cloth to throw over the top. Lentils only cost about $1.25 a pound, so they are a cheap way to bring greens into a diet.

I believe she is a good lady but this is UTTER BS that she has to buy their food. I am sure they get all kinds of aid and all of them have CASEWORKERS or else they wouldn't be in a facility like that. You just can't walk in and say you want to live there. That type of housing is SUBSIDIZED which makes them qualify for all kinds of stuff. Like the MAX of the handouts.

I cant really help with your current list...

But the next time you shop... Think of this...

I used to be poor poor poor and had to feed 3 people a month on very little money..

So a rule of thumb for me was this...

Oatmeal... One canister of old fashioned oats for each person.
If made per directions on the back... each can is 30 meals... and it sticks with you. I ate it many many times without sugar or honey or syrup... you just need a pinch of salt per serving...

one way to give the oatmeal a lil extra protein is to mix in a lil peanut butter...

So 11 people in total...going by the price i just paid for the generic can of old fashioned oats...
that is 21 bucks for 11 cans!... hey you can live on that!! 11 people one meal a day for a month for 21 bucks... cant beat that!!!


If you buy a generic bag of self rising Flour...
I still to this day do this... buy 25 pounds at a time... Save A Lot stores brand... Ginger Evans $9.99 for 25 pounds... I have seen non generic brands for 15 bucks or so... still not too bad of a deal!

You can make gravy... biscuits... fried flour bread... some people call em fritters?

Buy Corn Meal and make corn bread.... but use half flour and half corn meal... it makes it good!!

You can make poor mans dumplings... not as good as regular good ole chicken dumplings... but hey... it works
take about 3 chicken Bouillon cubes (more if needed per taste) make a broth in a big pot... and make dumplings out of the flour and once the broth is boiling... drop the dumplings in...

i have ate this several times... i usually made a big pot full and ate on it a few days.


Hard Tack... its a poor mans ration food... also historically significant!! Its shelf stable! Its great to eat with Bouillon broths!!! I made some about two months ago! Still eating them! lol

Salmon patties or Jack mackerel patties... or even Tuna patties! You can just add a can of the fish of your choice to a mixture of flour and corn meal (if ya got it) and you can double or triple the amount of flour mixture needed... I once made 40 patties from one can... decent sized patties too! wasnt a lot of meat in each patty... but it worked...

Potato cakes from left over mashed potatoes...

pretty much just like the above... instead of using salmon/fish

use potatoes instead... yummy! i eat this often!!

You can also use left over pinto beans (or any bean for that matter... great creative) to make a bean cakes


Flour...
Its a great food to work with and can make so many things!!!

Flour is the essential food for ALL people lol I love it!


If you need grease to cook with, I have had luck with this...
In the grocery store go to the butcher department and ask for the scrap fat... the pieces of fat that they cut off meat and dont sell... a lot of them will give it to you for free... or really really really cheap... you can use that fat and render lard... again not the idea of healthy... but its sustainable! Poor people gotta do what they can!!

You can also use the above method to make beef lard...

This one doesnt really help you considering the amount of people you have to feed... but I eat it a lot... i dont see it being cost effective for 11 people... but u be the judge...

*Can of Tuna
* Can of Cream of soup Chichen/mushroom/celery whatever i had
*Bag of egg noodles is the best with it... but any pasta works
*Can of Peas or corn if you got it... or both

cook noodles... warm up cream of soup with tuna and vegatables... when noodles are done... and when soup mixture is done... combine... and enjoy





Also I have ate this before... its not the best... but it beats starving!!! And you can even fix it for free!!!

Go to the nearest fast food joint... on the condiments counter pick up this...
For each serving you are gonna need...

1 pack of salt
1 pack of pepper
4 packs of ketchup
1 pack of sugar
1 pack of coffee creamer

In 8 ounces of hot water mix the above together...

It makes a poor mans tomato soup... while it certainly does not provide proper nutrition... it does keep the hunger pains away... and is way better than nothing!!!

I have also went to the cashier and got a free cup of hot water... for a meal on the go.

I dont see it as stealing... Certainly worse methods of getting food!!

You can also use the recipe and use ketchup you already have... you can skip the coffee creamer... but it makes it kinda creamy... ya know like adding milk.

Also dont forget about ramen noodles... 20 cents around here... will keep people alive!

But you gotta buy in bulk... bags of rice... bags of beans...

At your budget... and the number of people you are feeding... proper nutrition aint really gonna happen... instead fight the hunger pains...

don't forget about Stone soup....
it doesnt have stones in it... lol
have everyone bring one can of vegetables or fresh vegetables or whatever they have and make a soup from it...

pasta, corn, beans... whatever people can bring to you each day. I used to do this when all my friends would stay the weekend... they each would bring a can or two of vegetables and we would make stone soup... if you got a lil meat to add... add it... used to be i would only add one hamburger patties worth of meat to it... it was better than nothing!!! and that made my hamburger stretch!

Use a bullion cube or two for the broth or whatever your taste is.... salt and pepper and season to the way you like it.


Also you gotta eat more than once a day... one sandwich a day is gonna screw with your metabolism! If you wanna be around and be healthy... so you can help these people... you gotta take care of yourself... if you become too weak from not eating enough... then you might as well never started helping them...

and instead of "giving them a fish... teach em to fish..."

You know how that one goes...

I lived in an apartment for a year...
I will never do that again...
I finally moved back into the country...
Grow my own food...
Plenty of food walking around lol
But
I was so poor when i lived in that apartment
I would cry tears of joy when I found a penny on the street.
I prayed for rats... in hopes of catching one... that sadly is true.

Put an ad on craigslist requesting people's extra garden produce. It's fall, so many people will have extra squash, tomatoes, and apples that they will be more then happy to give away to a good cause.


Also, have you considered sprouting? A 1/4 of a cup of lentils will make a whole quart of healthy lentil sprouts in about 5 days. All you need is a container that you rinse them out twice a day and a cloth to throw over the top. Lentils only cost about $1.25 a pound, so they are a cheap way to bring greens into a diet.
