add oat meal to hambuger just before cooking...
get lard and beans, make refried beans, freeze in portions.
very filling and not bad for you. lard is cheaper then oil or crisco....10lbs beans, can of lard, approx. $12...
A little taco seasoning to hamburger and you have a mexican vacation. 40 - 1/4lbs servings and 1/4lbs of refired beans is alot...serve beans, hambuger on the side...
I'll try and think of some more, so check back...

I'm curious about some of the aggressive responses to Miggy's thread.
She hasn't asked anyone for money or free food, only ideas. Yet you attack her because, in your opinion her story doesn't add up?

From where I'm standing, nobody is getting a free ride out of this thread but there will be plenty of people passing through who may read the entire thread & get some good ideas about saving money & eating better.
I don't see any relevance whatsoever when people talk about food stamps & how the recipients of Miggys help should help themselves. If Miggy is a real person who wants to help real people because she has the heart to do so...

Why is that a problem?

That's not a criticism, because you're as entitled to your opinion as I am. It just doesn't make a lot of sense to me that's all.

I would appreciate any advice on stretching a small amount of food for a month. This may seem impossible when you read what I have to work with but I believe in miracles.

This is my situation...

I live in a transitional living facility of 8 apartments.

Most of these people have some type of physical disability or suffer from depression and they do not take good care of themselves when it comes to eating.

I believe God is using me to help them. I have witnessed incredible miracles occur in their lives just 6 weeks in knowing and helping them.

The little money I have had has been stretched to amazing heights. I transport them to doctor visits, the grocery store, etc. daily and always have just enough gas to get them to their destination and back again.

I have recently spent $80 of my food stamp money on basic foods and have been cooking them meals because most are unhealthy. I am particularly concerned with an 8 1/2 month pregnant woman who is not eating right- not because she doesn't want to but because she was never taught proper nutrition.

Yesterday I was blessed with a church offering me 12 loafs of day-old bakery bread and some eggs. I can NOT waste this food.

The majority of my life I was financially well-off and I never had to worry about not having food.

Can anyone give me suggestions on how to best use the following items as well as how to properly store them (such as freezing) so as not to waste one ounce?

Remember, this food MUST last clear through September because it's all I have to offer them until I get $80 more food in October.

The $80 I used apparently was NOT well spent because I am running out of food in just 5 days. It included items such as milk, butter, hamburger (stretched VERY thin), dried pasta and bread.

Because my pantry of such items as olive oil, vinegar, condiments, spices, etc. was stolen during my move here I don't have much to flavor the foods I prepare other than salt, pepper, mustard and mayonnaise.

I feel I should use whatever money I can scrape together to buy things to flavor the food so that it's pleasurable for them to eat.

This food will be used to feed two fifty year old men, two forty year old women, two thirty year old women (one pregnant), a three year old girl, a seven year old boy, and two seventy year old women. There are 10 total excluding me.

I can exist on a sandwich a day but the other residents are larger than me. And the children are active.

I would SO appreciate any creative suggestions. I just know God will come through for us and I thank you for helping me with your suggestions so that I can continue helping them.

They are really wonderful people. They've just fallen through the cracks and have no-one in their lives to care for them.

Items I have on hand:

3 lbs frozen navy beans
10 lbs potatoes
1 lb pinto beans
48 eggs
8 cups of breakfast corn flakes
2 lbs of white rice
4 cans of green beans
2 cans of peaches
2 onions
1 small can of tuna
1 large bag of egg noodles
2 boxes of Macaroni and Cheese
3 sticks of butter

Jar of ketchup
Jar of mayonnaise
Salt
Pepper

plenty of people have given recipees for stretching meals
but the numbers dont even come close.

if they are living in residential care facilities it means that most of these individuals are not functioning at a level where they can care for themselves either permanently or unti such time when they are through with treatment. Each would be assigned a case manager(s) who would automatically help them apply for assistance. They probably already receive a housing/utility voucher...some actual live in facilities that are owned by the mental health agency and have been guided to the local social service agency. There's more behind the story then what's being related.

If this is a scam, shame on Miggy!!! Shame, Shame!

until I get a reason not to... I'm gonna believe Miggy.

So far Miggy hasnt asked for money... has ignored paypal responses, etc... That makes me think this might be legit...

Also in defense of Miggy...

I know people who really should receive government assistance with food, etc and is not eligible!!!

These people worked for 30 plus years and paid their dues to society! yet cannot afford medical care and food and the essentials to healthy living!

People on social security who EARNED IT!

Yet crack heads/jerks who have done nothing in their entire lives... get great medical care! Housing assistance! Food Stamps! And 500 bucks to spend as they wish!

Thats messed up man... it should be the other way around...

Give the Social Security people the good benefits... give the low life's the shaft...

I also NEED to state... I know peoeple who draw SSI who actually need it... good people... they just have issues, actual issues... i'm glad they can get help.

But ya know its the abusers of the system that piss me off...

but hey its none of my business either way i suppose... I live my life, pay my taxes and leave the rest up to the government :) lol

Well being an American, Knowing all the outrageous food programs, EBT, transportation programs, phone programs, nutrition assistance programs, meals on wheels programs where someone actually brings prepared food to the door, mental health programs, senior citizen programs, and the list goes on and on and on and on. The story is hard to swallow. Unlike what you may think, everyone has access to food here. UK, I don't know about, but here there is tons of help, one reason we are going broke. So donate all you wish as often as you wish because that is your right.

Because the story makes no sense with everything that is available to people here in the U.S. We are going broke feeding the ones on food stamps and subsidizing everything else, including rentals, there are other food programs out there, too. Food banks... don't these people have any friends or relatives that could throw a few morsels at them?

As someone else said, where are their case workers? Wick doesn't take long to get. I am sure they are all already on food stamps and if not, then WHY NOT? Everyone else is, even if they have a job and can't make enough to pay for their food or their children's food.

The whole thing sounds ridiculous to me.

First - the pregnant women should get some WIC money ASAP...and none of this stuff is going to provide her enough nutrition...she needs help.

HERE ARE SOME IDEAS, look up the recipes:

SOUPS (put a little butter on top for nutrient absorption)

You can make Navy Bean Soup = onions, navy beans (but I'd also try to get a little celery and carrot in there...get a few more onions and some bay leaves, herbs)

White rice with fried eggs on top (get some soy sauce and sriracha sauce)...and stir fry whatever very cheap vegetables adding garlic, ginger and soy sauce

tuna-noodle casserole (cook noodles, add tuna, some mayo, salt & pepper, some canned peas if you have them and some diced hardboiled eggs)

Potatoes with butter & refried pinto beans on top (you'll again need a bit more onion...get a bit of cheese and salsa, if possible to make potato tacos)

Fried Eggs and Potatos (optionally, you can serve this with some pinto beans or pinto beans with some ketchup over toast)-- with plenty of salt and pepper

Bread pudding - bread, eggs, milk and diced peaches (you'll need some milk & sugar, just enough to sweeten it a tiny bit, for this and a bit of milk)

Mac and Cheese with Green Beans -- is always a lovely combination -- if you can get any sausage to go with it, all the better.

Vegetarian Loaf - Take whatever leftovers you have and make an Adventist meatloaf with some of your cornflakes -- you can google that...but beans, cornflakes, eggs, ketchup, leftover rice -- that sort of thing you can make into a Vegetarian Loaf.

Use butter on any soups, green beans, potatoes...to help nutrient absorption.

Reach out to local churches and food banks. Contact the local Mormons and tell them what you are up against; look up "Latter Day Saints" + (Your town name) on google. They help everyone, not just Mormons, through their Relief Society.

You can probably get emergency food stamps within three days, I know you can in California anyway. It's arduous going through the appointments, slow as molasses those folks.

You could also put out the request for help on the local Craigslist. Try the "Free stuff" section and also Community-General.

Oh...if you can get lemons or lemon juice and a bit of chicken or veggie stock -
Avgolemono is a nice greek soup from eggs, rice and lemons you can serve with oyster crackers (you can instead make some croutons out of your bread as a substitute for that)...I make it without chicken broth vegetarian and it's okay if you use vegetable broth or a bit of nutritional yeast (you can find this in bulk sections of stores)

Mousaka is another greek dish -- look this up -- you can use your bit of meat, potatoes, some vegetables (like the green beans or carrot, celery, onion), the ketchup and top it with an egg custard and cook.

Shepards Pie -- Like the mousaka, a casserole - you can use all your vegetables, bit of meat, some ketchup and top it with mashed potatos and cook it.

I have lived in poverty several times in my life. Here is some ideas that my family has done, hopefully this will help you out.

* Stretch the hamburger meat with oatmeal
*on the potatoes you could make something we call swamp potatoes you boil a pot full of cut up potatoes and add butter salt and pepper and cook it till it reduces.
* Spanish rice-diced onion and diced bell pepper, ground beef, tomato sauce or ketchup and rice
*goolash- pasta, tomato juice, ground beef, salt and pepper
* cabbage patch stew-ground beef, tomato juice, cut up cabage, salt and pepper serve with corn bread
*beans and corn bread
*red beans and rice
*baked beans
* bean burritos- boil some pintos with till done seasoned with salt and pepper, when they are done drain them and smash them by hand or put them in a food processor. Add a little diced jalapeno with seeds removed, diced onion, garlic, and mix all of that well. It helps if you do this in a blender or food processor.
*chicken and dumplings
*chicken pot pie made from scratch with small amount of meat
*chicken spaghetti

Oh, you can also make very nice HASH to serve with eggs:

Bake some potatos most all of the way, dice them and add to sauteed onion (almost burnt)....you can cook meat into this too, or the pinto beans. so delicious!

Fried egg sandwiches on bread with some mayo...another good option.

For the future, Lebanese food is inexpensive to make, especially from bulk -- lentil & rice soups, hummus (from bulk garbanzo beans), mujadarrah (rice, lentils, onion) with cabbage salad to the side and a bit of yogurt.

I just answered the question Miggy (The OP) posted.

If this is a scam, shame on Miggy!!! Shame, Shame!

until I get a reason not to... I'm gonna believe Miggy.

So far Miggy hasnt asked for money... has ignored paypal responses, etc... That makes me think this might be legit...

Also in defense of Miggy...

I know people who really should receive government assistance with food, etc and is not eligible!!!

These people worked for 30 plus years and paid their dues to society! yet cannot afford medical care and food and the essentials to healthy living!

People on social security who EARNED IT!

Yet crack heads/jerks who have done nothing in their entire lives... get great medical care! Housing assistance! Food Stamps! And 500 bucks to spend as they wish!

Thats messed up man... it should be the other way around...

Give the Social Security people the good benefits... give the low life's the shaft...

I also NEED to state... I know peoeple who draw SSI who actually need it... good people... they just have issues, actual issues... i'm glad they can get help.

But ya know its the abusers of the system that piss me off...

but hey its none of my business either way i suppose... I live my life, pay my taxes and leave the rest up to the government :) lol

Is there any possible way to share more details on this situation? How far are you from me in Oklahoma city? What type of place is this? Can/do they get food stamps? The pregnant lady qualifys. They have expedited food stamps in Oklahoma Miggy. Just go fill out apps, and wait possibly all day get approval and have them in 7 days, even get your card same day. You get them you know how easy it is to do.

i know what the place is... I used to hang out with a friend who lived in one...

the case workers... haha oh man... they didnt care what you got... as long as it was out of their hair.

The people I met while visiting my friend, they never once asked me for a damn thing. But they were suffering. Just cos someone lives in one of them places... doesnt mean they are living at the ritz with every need taken care of.


Sure a lot of people have good case workers who help them out...

But it is true... a lot of people have lazy ass case workers who dont care.

I have seen it with mine own eyes

This is very nice of you, but there is such a thing as being too nice. You need to help them help themselves. Not do everything for them. I am sure they are all eligable for some foodstamps as well. Or other programs. Disability etc. Sounds like you are taking on too much as an individual. And remember the old saying, 'No good deed goes unpunished'.
