This may seem impossible when you read what I have to work with but I believe in miracles. Quoting: Miggy This is my situation... I live in a transitional living facility of 8 apartments. Most of these people have some type of physical disability or suffer from depression and they do not take good care of themselves when it comes to eating. I believe God is using me to help them. I have witnessed incredible miracles occur in their lives just 6 weeks in knowing and helping them. The little money I have had has been stretched to amazing heights. I transport them to doctor visits, the grocery store, etc. daily and always have just enough gas to get them to their destination and back again. I have recently spent $80 of my food stamp money on basic foods and have been cooking them meals because most are unhealthy. I am particularly concerned with an 8 1/2 month pregnant woman who is not eating right- not because she doesn't want to but because she was never taught proper nutrition. Yesterday I was blessed with a church offering me 12 loafs of day-old bakery bread and some eggs. I can NOT waste this food. The majority of my life I was financially well-off and I never had to worry about not having food. Can anyone give me suggestions on how to best use the following items as well as how to properly store them (such as freezing) so as not to waste one ounce? Remember, this food MUST last clear through September because it's all I have to offer them until I get $80 more food in October. The $80 I used apparently was NOT well spent because I am running out of food in just 5 days. It included items such as milk, butter, hamburger (stretched VERY thin), dried pasta and bread. Because my pantry of such items as olive oil, vinegar, condiments, spices, etc. was stolen during my move here I don't have much to flavor the foods I prepare other than salt, pepper, mustard and mayonnaise. I feel I should use whatever money I can scrape together to buy things to flavor the food so that it's pleasurable for them to eat. This food will be used to feed two fifty year old men, two forty year old women, two thirty year old women (one pregnant), a three year old girl, a seven year old boy, and two seventy year old women. There are 10 total excluding me. I can exist on a sandwich a day but the other residents are larger than me. And the children are active. I would SO appreciate any creative suggestions. I just know God will come through for us and I thank you for helping me with your suggestions so that I can continue helping them. They are really wonderful people. They've just fallen through the cracks and have no-one in their lives to care for them. Items I have on hand: 3 lbs frozen navy beans 10 lbs potatoes 1 lb pinto beans 48 eggs 8 cups of breakfast corn flakes 2 lbs of white rice 4 cans of green beans 2 cans of peaches 2 onions 1 small can of tuna 1 large bag of egg noodles 2 boxes of Macaroni and Cheese 3 sticks of butter Jar of ketchup Jar of mayonnaise Salt Pepper Much love to all of you, Miggy was thinking maybe you can get others to send stuffs too. maybe to you via post office. not sure if they still allow general delivery or not. but its a thought. |

Everyone I know who has one has too many to eat. Those things produce like crazy. People who like them will eat them as a snack. Or even a meal adding some bread. For people who don't... you can cook them with beans, for example, to make a soup. Do you eat with these people? If you are preparing the meals, you ought to eat, too. Then you would have a better idea of portions because you'd be eating, too. Some people do need more food, of course. But, at least you'd have an idea. Carrots aren't expensive and adding carrot to a dish adds a lot of nutrition. They keep well, too. People who grow corn often give it away because corn stalks produce a lot. Same thing with squash. |

Popcorn, a little oil, and salt and you have a good snack. Sometimes people need snacks and this one is about as cheap as you can get. Also, instead of pasta, what about ramen noodles? Save the seasoning packet for something else. |
| Anonymous Coward User ID: 1229745 09/16/2012 07:03 AM Report Abusive Post Report Copyright Violation | Go down to the local fresh food street markets and get yourself some plastic bags and make a big colourful sign ..saying food needed to feed these people ...stick real photos on the poster and make sure it is easy and simply to understand and read then go from stall to stall and ask for any fruit and veg that will be thrown away that day ....then get the people from the home to help carry and collect the stuff about half an hour before the market closes (be on time) other wise you will be picking the stuff out the bin from what is given too you you can make soup and stews ...use the beans and potatoes to add protein and carbs Good luck and may the force be with you |

Always tons of food from local store donations(tax write off). All of you guys would be on foodstamps. If your signing up to live in a transitional housing that's practically the first thing they throw at you. The ones with kids get wic. And you wouldn't be coming home from church at 11:00pm getting on the internet since they usually have curfews where you would be in bed by 9pm. Crepes are pretty much flour, eggs, water and a bit of sugar and oil/butter. If you have a blender, very easy to make them. Go research some crepes recipes -- these are a great "stretcher" and taste luxurious. You can fill them with peaches (or sauteed apples if you can get some apples from someone, or bannanas...). If you have nothing, a bit of powdered sugar and lemon or a bit of sugar and cinnamon will do...even peanut butter! |

You cook the egg in the middle of the toast...sprinkle with salt & pepper (or seasoning...I use Old Bay or cajun Seasoning...any kind of seasoning) flip it over. Don't forget to cook the little round "hole" piece of toast too. This is something children will gobble up. Gypsy Toast -- which is just like french toast, sans the sugar/sweetness and just the eggs. So, whisk eggs with some salt and pepper, put in toast, and cook like french toast. |

Pasta noodles are super cheap or you can make it even cheaper yourself with 3 ingredients! You can make eggless pasta too that costs even less(recipe is found online)! You need to home make your sauce, garlic bulbs are cheap, farmer market tomatoes or the cheapest you can find. You will however need some dried Italian seasonings but you can find them premixed in larger jars pretty cheap sold as...you guess it...Italian seasoning. You can add meat to the pasta or not, here we usually chuck up onions ans simmer them into the sauce. Ground turkey is cheaper than ground beef but if you can find a cheap pork butt roast and grind that yourself you will saves tons more money and pork tastes much better in Italian sauce. I make months worth of sauce at a time and freeze it for winter! I make some meatless and some with meat. We grow our own tomatoes but if I couldn't I would keep an eye out for a cheap bushel and stew them down myself. We use lots of rice and beans here too. I either home make my breads or freeze store bought. Making homemade pasta can be something fun for everyone to join in with, the house looks neat with it drying all over the place. You don't need expensive drying dowels either. Just use a mop or broom handle completely covered with clean foil. Once completely dry pack in anything airtight. |

People go out late at night, after supermarkets close, and help themselves to the food that is discarded. It's kind of disgraceful just how much is thrown away. If an egg breaks in a carton the whole carton is dumped. same with a bottle of wine in a carton,cheese and bread that is a day past its use by date,bruised fruit and vegetables, etc ad nauseum. A national magazine had an article about it recently-one artist used only paints and canvasses etc. that had been dumped. Such wastage when people are going hungry. |

Rice is a good carb, and beans have protein, but only vegetable protein. Combined they act in synergy to produce a dish that is filling but also provides complete protein as would a meat dish. Check out the nearby restaurants for "garbage" food - tossed out simply because the customer couldn't eat it all. Spend the little $$$ you have on beans, grains and greens. |
