What you need to realize with telescopes and cameras that in order for them to capture those awesome star pictures you see, is that they leave the mirror open for extended exposures, which gradually collect more and more light that the human eye cannot see.
These cameras used in the jump were set on low exposure times in order to capture still movement, not extended. If it was extended you would just see a giant blur, because the base was consistently moving.
You really just have to understand how photography works to understand capturing light. The whole scene is properly exposed to capture the immediate area of importance. Stars were not important.
