Some areas have severe weather moving in too. A friend in PA is expecting heavy snow within a week or so. Maybe some people are doing some last minute prep work.

Employees once had a decent guy running the place, no more.

I remember going into a new Safeway a few blks away and the corp guys all stood in a semi-circle and I shuddered.
Employees there are micro-managed and miserable.

Soup is on sale this week. When an item like soup goes on sales, people stock up. Cheap, easy to cook, long shelf life.

What shocked me were the cans of Pringles chips marked $2.99

To Hell with buying soup. Just make your own. This cream of mushroom soup is HEAVEN on Earth and it only takes 20 minutes start to finish.

Ingredients

1 pound fresh mushrooms
1 stick of butter
4 green onions, thinly sliced
3 cloves garlic, chopped
2 tablespoons all-purpose flour
4 cups vegetable or chicken broth
1 cup light or heavy cream
salt and pepper to taste

Optional
1 sprig fresh thyme leaves
1 tablespoon chopped fresh chives



Directions

Thinly slice the mushroom caps, discarding the stalks.
Melt the butter in a heavy-based pan and cook the spring onion, garlic, stirring, for 1 minute, or until the garlic is golden. Add the mushroom and salt and white pepper. Cook for 3 to 4 minutes, or until the mushroom just softens. Add flour and cook, stirring for 1 minute.

Remove from the heat and add the stock, stirring continuously. Return to the heat and bring to the boil, stirring. Reduce the heat and simmer gently for 2 minutes, stirring occasionally.

Whisk the cream into the soup, then reheat gently, stirring. Do not allow the soup to boil. Season to taste with salt and pepper, and garnish with the chopped chives and thyme.

Not to put a wrench in your doom, but canned soup goes on sale this time every year. Especially, cream of mushroom, cream of celery, tomato, chicken stock, beef stock, cheddar cheese and cream of chicken. Go, buy now and save.
