There are some people who do that, I don't though. You can see some of my posts, I've made them into crackers...or you could put them into baked goods. The ones that are soaked in water are similar to a tapioca or rice pudding, if you don't want to eat it that way you can incorporate that gel into yogurt, cottage cheese, oatmeal, or baking as well.
