I make a really yummy dip by putting them in plain (or whatever flavor you like) yogurt and letting it sit overnight. My kids dip apple slices in it (me too!) and other fruits as well.
Expect some appetite reduction. Even if you soak them, they still get bigger in your stomach, filling you up in a way that lasts. :)
