Store them in a seller...they aren't worth canning. I have potato bins in my basement, they work well...

peel, parboil, slice or dice then dehydrate them.

Vaccuum seal and place in Mylar bags with an oxygen absorber, then seal the Mylar bag (hot iron).

Place bags in rodent proof container.

Will keep for 15 -20 years.
