Both are made as thin as possible and we use all kinds of fillings like sourcream, honey, jam, salmon, minced meat, cavier, baked condensed milk, cheese with mayo and garlic, etc. We have a special week called Maslenitsa (a week before Great Fast which precedes Easter) when we all make blins almost every day. It's a very old pre-christian tradition. Blins were a symbol of a sun for our slavic ancestors. |

In Britain they (we) have exactly the same as the Russians - I make mine with 2 eggs, 8 heaped teaspoons of plain flour, about a 4:1 mix of milk and water (mix with milk first to get all the lumps out, then add a pinch of salt, then thin the mixture down with a few splashes of water. Then fry 'em up in a hot pan - hot enough so you can just see traces of smoke coming up off the oil/lard. This make 5 or 6 pancakes (blini) and I always smear golden syrup over the second last one, then sprinkle sugar on, then put the last pancake on top, and "glaze" the top of it with whatever syrup is left on the knife. Then I lightly score the top in a checker-board pattern and splash a bit of milk on top. I then neck the whole lot in about 2 minutes flat and wash it all down with a nice cup of coffee. |

It makes them especially delicious. Chewing complex carbs converts some of that into simple sugars in the mouth, and so adding in different complex carbs makes them especially sweet and delicious. |
