Bacon wrapped breadsticks

Just buy some of the breadsticks that are about as big around as your thumb and approx 6 inches long. Wrap them in RAW bacon from end to end.Sprinkle with whatever searsonings you like. Lay them on a microwaveable plate and microwave until the bacon is tight around the breadstick (it won't be crispy until it cools a bit).Around 3 minutes.

The breadstick absorbs the bacon grease as it cooks and makes it taste SO GOOD. Have a couple of dips available.

ALso, sausage balls. Only three ingredients. A roll of Jimmy Dean breakfast sausage, grated cheese and BIsquick.

Mix and roll into balls an bake until brown. YUM.

Texas Caviar made with beans, corn, onions, peppers and garlic, add some avacados, good salsa-like dip for corn chips... I don't like cilantro though.

Mozzarella, Tomato & Basil Plate - Insalata Caprese

1 pound fresh mozzarella cheese, cut into 1/4-inch thick slices
3 to 4 medium fresh tomatoes, cut into 1/4-inch thick slices
1 bunch of fresh basil leaves
Extra-virgin olive oil
Sea Salt and pepper


Preparation:

In a circular design around the side of a serving plate, alternate fresh mozzarella slices on a large platter (or on individual plates if you are doing individual portions) with sliced tomatoes, overlapping for effect.

Tear fresh basil leaves and sprinkle liberally over the slices. Add salt and freshly ground pepper to taste. Sprinkle capers over the top if you like.

Just before serving, drizzle on some top-quality extra-virgin olive oil.

If you like a good basalmic vinegar drizzle a splash.

Velveeta rotale dip - It's easy to make, can feed lots of people, and is DELICIOUS! My whole family loves this.

1 lb. (16 oz.) Velveeta pasteurized prepared cheese product
1 roll Jimmy Dean hot or original sausage
1 can Rotel Mexican tomatoes (for less spicy flavor, use original)


Brown meat until fully cooked. Should be very little grease. Meanwhile cut Velveeta into small cubes. When meat is fully cooked slowly add cubes of Velveeta, while stirring frequently. Turn burner to medium/high.
When Velveeta is melted turn burner to medium/low. Add Rotel Tomato mix. Mix well.

Best when dip is hot or kept warm. Great with chips, in tacos or burritos, or even omlettes.

Blue Cheese dip

Ingredients:
4 oz. cream cheese, room temp
1 cup sour cream
4 oz. tangy blue cheese
2 Tbs. chopped fresh chives
1/2 tsp. freshly ground pepper

Directions:
In a bowl, using a handheld electric mixer,beat the cream cheese on medium speed until soft and creamy, about 2 minutes.

Reduce the speed to low, add the sour cream and beat until combined, about 1 minute. Add the blue cheese and beat until the cheese is crumbled and no large lumps remain, about 1 minute. Stir in the chives and pepper.

Transfer the dip to a small serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes or up to 1 week. Serve with potato chips and crudités. Makes about 2 cups.

I make a thing we call the diablito. A focaccio bread, a type of Italian flat bread. Ahi tuna sashimi pieces on top, onion, avocado, and chipotle sauce.

It's Italian, it's Japanese, it's Mexican. All at once. Like a Mexican sushi pizza from heaven.

Shrimp bites (super simple, shrimp, creamcheese, mozzarella, parsley, little mayo put into fillo dough mini shells)

Crabcake bites

Spinach balls

restaurant style potato skins (took me forever to figure out how to get them JUST right)

Shrimp and Crab fondue

watermelon salsa

supreme nachos

bacon wrapped asparagus

pecan pie bites


homemade jumbo ravioli (sometimes cheese stuffed, sometimes seafood, sometimes meat)

oh I could go on and on and on. (cooking is "my thing" so this post is right up my alley :) )

Zucchini Hummus
So easy, five minutes in a food processor or blender.

1 Can (15 oz) of chickpeas (garbonzo beans) - drain water away
1 cut up zucchini
2 garlic cloves - I always saute them a few minutes to get soft and bring out the flavor
1/4 cup chopped cilantro
1/4 cup chopped parsley
Salt and pepper to taste
2 tsp of fresh squeezed lemon juice
1/4 cup of good olive oil
Just blend it all together, and it's a beautiful fresh green appetizer - serve with pita chips or pita bread and carrot sticks.

Southwest Meatballs

Chop up pickled jalapeno peppers - up to you how hot you want it
1 pound of ground beef
1/2 cup bread crumbs
1/4 cup milk
1/4 cup shredded cheese - cheddar or Monterey jack
Salt and pepper to taste
1/4 cup chopped onion
1 egg
Salsa 2 cups

Heat oven to 400 degrees - and mix everything together EXCEPT the salsa.
Shape into one inch balls. Put in a pan and bake uncovered for about 17/18 minutes. Pour salsa overtop and serve up with toothpicks. These are also good without the salsa poured overtop - up to you.

Have fun cooking OP! Most enjoyable this time of year. :)

Nacho Dip

1 lb of ground beef
1 8 oz package of cream cheeze
1 8 oz of sour cream
Chopped Green pepers
Chopped Mushrooms
Chopped Tomatoes
Shredded cheese

Cook ground beef with garlic and onion
soup mix to your liking. (or whatever
seasioning you prefer)Once cooked to
perfection, set aside and drain excess
fat and allow to cool.

Mix the cream cheese and sour cream well
with a mixer (or by hand) and place in a
pan and place in the frige to cool.

Cut up green peppers, mushrooms and tomotoes.

Once the beef has cooled, take the cream cheese
and sour cream mixture out of the frige and layer
the beef on top. Then add the mushrooms, peppers
and tomotoes and top with shredded cheese of
you choice.

Take Nachos and scoop to your hearts delight,
or until it stops beating..LOL

This is even better the longer you refrigerate
as it adds more flavor.

This recipe was always something we ate as kids, it was made from peperidge farm stuffing and frozen spinach. As I've grown into my adult palate :) I've changed it a bit.
2 cups of seasoned stuffing mix (or homemade stuffing, stale bread and seasonings)
1 small onion chopped
4 eggs beaten
3/4 cup margarine ( I used real butter)
1/2 tsp garlic ( I use a whole clove from the garden)
1/2 tsp salt
1tsp (scant) herb de Provence (or some thyme, rosemary, fennel mixed together)
1/2 cup freshly grated Parmesan
2 boxes of frozen spinach cookeded and squeezed dry ( I use fresh and you'll have to forgive me because I eyeball everything, takes a good bit to equal two boxes worth but it's well worth using fresh rather than frozen) Make sure you squeeze as muc liquid as you can out with cheese cloth or tea towel.
Mix everything together let set in fridge for at least an hour, roll into balls (bite size) bake 15-20 minutes @ 350.
