Zucchini Hummus
So easy, five minutes in a food processor or blender.

1 Can (15 oz) of chickpeas (garbonzo beans) - drain water away
1 cut up zucchini
2 garlic cloves - I always saute them a few minutes to get soft and bring out the flavor
1/4 cup chopped cilantro
1/4 cup chopped parsley
Salt and pepper to taste
2 tsp of fresh squeezed lemon juice
1/4 cup of good olive oil
Just blend it all together, and it's a beautiful fresh green appetizer - serve with pita chips or pita bread and carrot sticks.

Southwest Meatballs

Chop up pickled jalapeno peppers - up to you how hot you want it
1 pound of ground beef
1/2 cup bread crumbs
1/4 cup milk
1/4 cup shredded cheese - cheddar or Monterey jack
Salt and pepper to taste
1/4 cup chopped onion
1 egg
Salsa 2 cups

Heat oven to 400 degrees - and mix everything together EXCEPT the salsa.
Shape into one inch balls. Put in a pan and bake uncovered for about 17/18 minutes. Pour salsa overtop and serve up with toothpicks. These are also good without the salsa poured overtop - up to you.
