Wrap them in RAW bacon from end to end.Sprinkle with whatever searsonings you like. Lay them on a microwaveable plate and microwave until the bacon is tight around the breadstick (it won't be crispy until it cools a bit).Around 3 minutes. The breadstick absorbs the bacon grease as it cooks and makes it taste SO GOOD. Have a couple of dips available. ALso, sausage balls. Only three ingredients. A roll of Jimmy Dean breakfast sausage, grated cheese and BIsquick. Mix and roll into balls an bake until brown. YUM. |

Tear fresh basil leaves and sprinkle liberally over the slices. Add salt and freshly ground pepper to taste. Sprinkle capers over the top if you like. Just before serving, drizzle on some top-quality extra-virgin olive oil. If you like a good basalmic vinegar drizzle a splash. |

My whole family loves this. 1 lb. (16 oz.) Velveeta pasteurized prepared cheese product 1 roll Jimmy Dean hot or original sausage 1 can Rotel Mexican tomatoes (for less spicy flavor, use original) Brown meat until fully cooked. Should be very little grease. Meanwhile cut Velveeta into small cubes. When meat is fully cooked slowly add cubes of Velveeta, while stirring frequently. Turn burner to medium/high. When Velveeta is melted turn burner to medium/low. Add Rotel Tomato mix. Mix well. Best when dip is hot or kept warm. Great with chips, in tacos or burritos, or even omlettes. Reduce the speed to low, add the sour cream and beat until combined, about 1 minute. Add the blue cheese and beat until the cheese is crumbled and no large lumps remain, about 1 minute. Stir in the chives and pepper. Transfer the dip to a small serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes or up to 1 week. Serve with potato chips and crudités. Makes about 2 cups. |

Southwest Meatballs Chop up pickled jalapeno peppers - up to you how hot you want it 1 pound of ground beef 1/2 cup bread crumbs 1/4 cup milk 1/4 cup shredded cheese - cheddar or Monterey jack Salt and pepper to taste 1/4 cup chopped onion 1 egg Salsa 2 cups Heat oven to 400 degrees - and mix everything together EXCEPT the salsa. Shape into one inch balls. Put in a pan and bake uncovered for about 17/18 minutes. Pour salsa overtop and serve up with toothpicks. These are also good without the salsa poured overtop - up to you. (or whatever seasioning you prefer)Once cooked to perfection, set aside and drain excess fat and allow to cool. Mix the cream cheese and sour cream well with a mixer (or by hand) and place in a pan and place in the frige to cool. Cut up green peppers, mushrooms and tomotoes. Once the beef has cooled, take the cream cheese and sour cream mixture out of the frige and layer the beef on top. Then add the mushrooms, peppers and tomotoes and top with shredded cheese of you choice. Take Nachos and scoop to your hearts delight, or until it stops beating..LOL This is even better the longer you refrigerate as it adds more flavor. |

Watermelon salsa: 2 cups seeded finely chopped watermelon 1/2 cup finely chopped cucumber 1/4 cup finely chopped red onion 1/4 cup finely chopped sweet red pepper 1 jalapeño pepper seeded and minced (sometimes I leave a few seeds for heat) 1/4 cup fresh cilantro minced 1tbsp fresh basil minced 1 tbsp fresh mint minced 2 tbsp honey 1 tsp lime (or lemon) juice Mix together best if chilled for a few hours or over night for flavors to marry. Spinach balls. This recipe was always something we ate as kids, it was made from peperidge farm stuffing and frozen spinach. As I've grown into my adult palate :) I've changed it a bit. 2 cups of seasoned stuffing mix (or homemade stuffing, stale bread and seasonings) 1 small onion chopped 4 eggs beaten 3/4 cup margarine ( I used real butter) 1/2 tsp garlic ( I use a whole clove from the garden) 1/2 tsp salt 1tsp (scant) herb de Provence (or some thyme, rosemary, fennel mixed together) 1/2 cup freshly grated Parmesan 2 boxes of frozen spinach cookeded and squeezed dry ( I use fresh and you'll have to forgive me because I eyeball everything, takes a good bit to equal two boxes worth but it's well worth using fresh rather than frozen) Make sure you squeeze as muc liquid as you can out with cheese cloth or tea towel. Mix everything together let set in fridge for at least an hour, roll into balls (bite size) bake 15-20 minutes @ 350. 1/2 Oldmotherhubbardglp (at) live.com ~mistakes are proof that you are trying~ ~be kind to unkind people, for they are the ones that need it the most~ |
