I eat this almost everyday and I can't get enough of it. Only thing I do is add a little shredded cheddar to my broccoli. I drink water only and I take vitamin C supplements. If this diet is sufficient enough, what's the least things I can add to it to make it more complete?

Depends on what beans.
Certain beans only have one type of simple protein chain....and humans need much more for long term health.
Certain beans are much better than others.
