I think this is all a bunch of BS. First of all, Davis is employing anecdotal evidence. That's why he wrote a book instead of a scientific paper (since you need actual empirical evidence in science). Well, that and the fact that books make money, while papers just advance science.

Gliadin has always been in wheat. It is a type of gluten.

You want to know why people lose weight when they dump wheat? Wheat is a concentrated source of calories, mostly carbs. That is a very good thing when people are forced to live on a healthy number of calories each day. You know, the balanced meals, with no pizza, capachinos, donuts, candy bars and cokes in between.

When you remove the concentrated source of calories (and nutrition) you end up consuming less calories and thus lose weight.

I'll bet a shiny silver dollar that people who eat a lot of wheat, but only consume 2,000 calories a day, and who don't lay on their asses all day don't get wheat belly.

It isn't wheat belly. It's fat ass belly from eating 3,000 calories a day and thinking that because you walked up the stairs to get from one padded seat to the next that you exercized today.

Or maybe the wheat crust is really the reason that pizza is so unhealthy. Yep, must be. It isn't the grease, the pepperoni, the cheese......it's the wheat!

Just this morning my husband and I bought some gluten free flour and made some homemade biscuits from it and it tasted like
S***!
And it is pretty expensive.

We didn't even give it to the birds. We tossed it.
I put baking powder in it like the recipe called for
and the biscuits didn't rise much and looked more like
cookies. Awful cookies.

About Wheat:

My husband read that wheat is relatively new (500 years?) in human diets and isn't that good for us anyway?

Since einkorn is such an ancient grain and the only known diploid classified variety of wheat still known to exist today, there has been considerable interest in the issue of gluten toxicity. One way of measuring gluten toxicity is by the gliadin to glutenin ratio, and einkorn has a much more favorable ratio than modern wheat varieties. It's pretty fascinating how using different wheats produce different results. Also fascinating how many products it can make.

Seitan, the vegetarian meat, is made from wheat. It's a nuisance to make, but easy after the wheat berries are ground.

Seitan picks up the flavor of anything it's cooked with, like beef, chicken, or whatever and is a great meat extender.

Cream of wheat is obviously made from wheat and homemade is very good, but like bread, it's more hearty than store types.

Thank you for this article.

I have a wheat grinder, and in an effort to be healthy, have made my own bread in the past. I've not ever sprouted my wheat, but have experimented with soaking the grains, per Weston Price.

I have had health issues for a while now. In the past few years, I had developed belly fat. We recently cut out all grains and switched to Paleo and have lost the belly fat...both of us...without trying. My husband's sleep apnea and snoring is gone.

Whenever we cheat, and I make bread, my face puffs up and I start feeling bad.

I've found it hard to reconcile how it could be 'bad' to eat the 'staff of life'. This article explains it perfectly.

Not true. I read his book and he said eat lots if veggies, fruit, lentils, beans etc. just don't eat modern wheat. Atkins was all about putting your body into ketosis, this is just eliminating wheat period.

You would also have learned if you read the book that the previous versions of wheat we ate prior to the early 80's had 17 chromosomes and our modern version now has over 90 chromosomes. It is a completely different thing we are eating now. Ever wonder why wheat allergies sky rocketed? People in their 50's to 80''s developing an allergy they never had?

also, i am pinning this because it would be great to see a discussion about how the media works with the food manufactures (cargill) and how they get you to stop buying one thing to buy another.

they always have a new "superfood"
and they always have a new "this is terrible for you" and "this is better" thing.

i say follow your instinct. your body will tell you what it wants.
for instance, i always instinctually knew that margarine was worse than butter.

and then there is the eggs are bad , eggs are good, no they are worse than cigarettes, no they are great thing.

personally, i think eggs are a "super food"

also RAW MILK is a "superfood" and that is the one they want you to know about the VERY least. which is why it is illegal to even sell any in most places. they do raids on the amish for selling pure whole fresh milk.

i think we should be able to decide what goes in our bodies.
and make choices about what to eat.

so the milk thing really gets me pissed.
i've never had the opportunity to buy fresh whole milk that has not been treated and i feel angry that i cannot get it if i want to.

people get really riled when you start talking about food. it's amazingly personal and political. a lot like talking about hair. hair is another weird thing that people are adamant about "how it should be"

and nothing will start an argument faster than talking about food. i've learned that since being on the internet since 1995. it's pretty crazy topic.

i am fascinated by the personal and political way we treat food.

but we should, because "you are what you eat" this is absolutely true.

the way they are controlling the food supply right now makes me so angry i cannot even express it.

i'm not completely sold on the idea that ALL genetically modified anything is bad for you, however.

crossbreeding things...fine....but going right in and changing the dna structure of things seems to be playing a blind god.

what we need to do is start LISTENING to our bodies.
our bodies will tell us what is good or bad for us.

and there is no "one size fits all" diet for everyone.

i wish people would get that.

everyone of us has different needs. so while a raw vegan diet might be awesome for someone, a paleo diet is equally awesome for a different body type.

look into aryvedic medicine.
it's the most sensible one i have come across.

in it we all have 3 "doshas" vata, pitta, kapha. and balancing these 3 things is absolute key.

i know there is an eat for your blood type diet. i looked at that and it did not ring true for me.

but the aryvedic one did make complete and total sense.

some foods that are bad for some people are really good for others and vice versa.

there is really no "bad food", there really, in the end, is not eating in a balanced or sensible way.

the most IMPORTANT lesson tho on eating, imo, is to give thanks for what you have.
the mindset you have AS you are eating is complete and utter key to how your body processes food.

for instance, do not eat when you are angry.

and give thanks for whatever it is you have.

because everything is ENERGY , in the end. all is one, and a person who eats a twinkie with gratefulness and mindfullness will live a longer happier healthier life than a person who is constantly worried about poison and becoming obsessed with juicing and fasting and purging.

in the end, "there is no spoon" is what i am saying.

so, eat with gratefulness and without anger and LISTEN TO YOUR BODY. it knows exactly what it needs.

Kamut and spelt are also not wheat, but make good bread with an old fashioned bread flavor.

I particularly like the flavor of spelt bread, because it has the same sweetness that bread used to have prior to the extensive hybridization/genetic manipulation of wheat.

But it is so expensive to buy at a local Coop with a bakery. :-(

You can buy spelt flour at a lot of bulk natural food stores. You need to handle it a little differently than wheat when making the bread.

A friend who is wheat sensitive swears by kamut, and makes a very good bread from it.

Yeah wheat sucks i knew it for a long time.

But how about other grains such as rye ?? Especially if they are not industrially refined.

I use non GMO wheat. Eikhorn is an old wheat. Probably anything that is either very old, or not tampered with would be best.

Wheat Belly is an excellent book. I read it this summer. I liked it so much I bought 3 more copies and sent them to my family.

I cut wheat out 2 years ago because I suspected it was making my severe asthma much worse. I was right.


Today's wheat is addictive and terrible for you. It raises your blood sugar like crazy causing a lot of people to get fat. Also the altered DNA of the new wheat could also be altering OUR DNA and causing the majority of today's illnesses.

I can't recommend this book more!

IT isn't my fault I'm a disgusting fat ass. The wheat did it. NO. It isn't the 2 liters of Dr. Pepper I drink every day. It isn't the take out pizza, tacos, and cheeseburgers. Not the three bags of Lay's chips and the 3 super size fries I eat.

It has nothing to do with the fact that in the last three years I've rarely broken a sweat doing anything besides while deep frying shit in my hot kitchen.

It has nothing to do with the 5 gallons of sweat tea or the 3,500 calories my disgusting slob ass eats every day.

No. The wheat did it.
