How to avoid the average person from being able to track down the writer by the UPC code submitter or some such thing?
Also what country it comes from...
I'm new to the concept, all ideas are welcome.

Some people like to get PAID CASH when they write books. The system is set up for this. Probably the best you can do is to either publish from a sudonym from a po box.

Some writers publish thru a church who sends them the monies and wont reveal the person who wrote the books.

But if you have no interest in money the best way to publish today is online websites. Just publish it, duh.

I'm not sure how to do the pseudo name thing and make it stalker proof. I mean, something has to be registered to a legit name, like the bar code?

It's called a pseudonym and if you don't use one you'll regret it. If you use one, the publisher will know your name but they won't release it. Any mail you get will go to the publisher and they'll forward it to you.

If you're writing for different audiences, like children, adults, fiction, non fiction, mystery, etc. you'll want a different pseudonym for each category. hf
