A really advanced and comprehensive and expensive test could probably tell ancestry. Which would be super interesting. But no, usually these genetic tests usually concentrate on a certain chromosome to see if there are any abnormalities.

Genetically the answer is simple. You have at least 1/8'th Jewish blood in you and therefor your kid should get tested or the genetic diseases. Even if you were 100%, they are still very rare so I wouldn't worry.

The issue about Paternal vs Maternal decent is complex. See this wikipedia page. It's possible that the Rabbinic sages got it wrong in the Talmud. The torah is from g-d the Talmud is rabbinic writings and interpretations. It's also possible that maternal decent was assumed in pre-talmidic times before the diaspora.

The issue of whether you would be recognized as Jewish by the orthodox community would be that your direct Mother would have to be Jewish. Anyone can convert to Judaism, but to be recognized by the orthodox community the process is rather strict and requires much learning, taking about 1 year.

The question comes down to what they call 'irrevocable status' which pertains more to who can automatically gain citizenship in Israel. That takes the traditional Orthodox position of having a Jewish mother.
