Real chili con carne (Mexican) uses cubed (stew) beef and/or chorizo and has no beans. It should also be spicy enough to make you feel as if you just ate Mexican.

Tex/Mex, on the other hand can have whatever the Hell you happen to have rotting in the fridge (beans included) thrown in and most people will still call it chili.

I used to point that out to people constantly as I served them my homemade chili that was based on a recipe that I got from a friend who is from Mexico. Anymore, I just let it slide, because if nobody else gives a shit, (pardon the pun) why should I.

I experienced chili doom last night,

I am from Texas. My girlfriend who is from up north made homemade chili last night, I think she put 3 types of beans in it. We got into a discussion about how chili shouldn't have beans in it.

So what do you think.. beans or no beans?

Now I read up on this very subject and the ORIGINAL chili was just beef mashed up with (guess) chiles! Since then there have been many variations introduced inlcuding 'white chili', chicken chili, pork chili. Beans or no beans, now it's the sauce flavorings that make it chili. That's why I can go to the store and buy a can of "chili beans" - no meat.

My vote goes for the beans. I used to only use kidney beans from a can. But in my little store only two brands of kidney beans and both of them are too hard, even after being canned.

So I switched to pinto beans. Now I prefer them to the kidney beans.

I'm making a batch tomorrow and picked up all my ingredients today.

What's better than a "good" bowl of chili?

Chili with pintos is great. You want real heresy? Take mesquite smoked sausage and/or pork/venison sauasage. Split them in half at hot dog lengths. Brown them in a skillet and when caramelized add the beanless chili. Use them like hot dogs in hot dog buns. Add chili and Guldens deli mustard as a topping. Fuckin better than better was ever better! It's like "hold sex I'm having a better time".

What a strange question. If you put beans in chili, it is no longer chili, but Chili beans. Chili does NOT have beans. Chili is meat and seasonings. Next you'll be talking about putting celery in chili.
