How can I go beyond "fallen away Catholic" to "not Catholic"?

Hypocrites! You view somebody who says "Once Saved Always Saved" as evil...because they think God will always give them a saving faith...but, you turn around and say that the Church is more powerful than God, because according to you, ONCE CATHOLIC ALWAYS CATHOLIC!!!

God erases the gift of the true faith just because a person
decides to leave it? No accounting? A person's spiritual life and what they will be judged on begins at the falling away, no.
God takes into account what a person understands, He is so
loving. History, the miraculous show Roman Catholicism is
the true faith but major, Protestantism and non-Christian
sects are easy to follow.
OSAS is heresy that stems from another Protestant heresy, Sola Fide.
