Jesus was speaking of the ROMAN SOLDIERS who were placing him on the cross, as they were just following ORDERS. He was not speaking in reference to the wicked people who were actually RESPONSIBLE for his crucifixion, who knew EXACTLY what they were doing.
Just as people like you know EXACTLY what you are doing, when you are attacking the word of God, and God's people.

You go back to the passage, and look at who Jesus was referring to. It wasn't EVERYONE. It was the soldiers He was speaking of. Look at the sentence right after He said it.
The word THEY" refers to the ROMAN SOLDIERS, who had crucified him, and were then casting lots and dividing his garments. here it is:
"And when they were come to the place, which is called Calvary, there they
(the Roman soldiers) crucified him, and the malefactors, one on the right hand, and the other on the left. Then said Jesus, Father, forgive them; for they know not what they do.
And they parted his raiment, and cast lots. And the people stood beholding. And the rulers also with them derided him, saying, He saved others; let him save himself, if he be Christ, the chosen of God. And the soldiers also mocked him, coming to him, and offering him vinegar, And saying, If you be the king of the Jews, save yourself."
