The first simply shows the phase and libration, any real picture taken from a non-polar aligned perspective is also subject to field rotation which depends on your position and the moon's position in the sky (thus phase charts cannot tell you what that will be because it depends on the specific observer).

Look at the Helical Solar System model where everything rotates or moves in spiral patterns. Galaxies are in constant motion expanding out into the universe. The sun is moving around our galaxy and the planets move around the sun in a constant motion, a spiral pattern. Everything is in movement in the universe so it is audacious for us to cling to the old model of our solar system. It seems with constant movement that things would shift along the way position wise so the earth tilts differently and the moons tilt is shifting also. Change is the norm!
