It has something to do with the way we (as babies) develop our thought process. To a baby, if something is hidden (like a face in Peek-A-Boo), the baby is convinced that the face really has disappeared. It has something to do with how they haven't figured out the world exists outside of their perspective... there's some term for it but for the life of me, I can't recall it at the moment.

All that is to say that it's not so much that the noise is funny but rather, a lack of noise is not funny. As we grow older and learn how to predict the outcome of something with more certainty, we develop a more subtle sense of humor. It's sort of like how you can't tickle yourself and get the same effect of someone else doing it.
