While the heat breaks down the oil after awhile, what's the real problem? I mean when heated high enough to kill anything growing in it, then what's the harm? Sure it looks funky, but it won't make you sick...

I worked at KFC. The oil is usually kept for a week or more and is cleaned every night through a drain/filter/refill process. It's not unusual - at least they clean the oil. The health risks at KFC come from unwashed hands, raw and cooked chicken mixing, and poor temperature control of cooked food.

The gravy is made from a gravy mix with a scraping of shortening from the inside of a fryer. It gives the herbs and spices (and chicken) flavour to the gravy. Re-using shortening in a gravy or sauce is just normal cooking - ever had a roast where you use the sediment and oil in the bottom of the oven pan to make the gravy? It gives flavour, a bit of oil in food is good. It's not that gross if you know about cooking and you would be just as surprised at techniques used in 5 start restaurants :) (source: wife is a award winning chef)

That oil is well past its sell by date, I mean you probably could not even refine that into bio diesel. Fuck sakes, Peru & its neighbours should be leading the way in green initiatives, considering the rate it is hacking through the Amazon rainforests.

I had a business/franshise that catered to both residential and commercial customers. It wasn't long after that I learned to say NO to restaurants.

They are breeding grounds for anything intestinal and I will never eat at most fast food places ever again after that experience. I won't call out certain ones, but yes, there are some that are way, way worse than others.

Ask any fast food worker.

I agree completely. Not making excuses for this particular KFC but the majority at least clean and replace their oil. One of the pitfalls of a franchise system of course...you can never tell which ones are hygienic and which ones are cesspits.

The raw meat cutting area's were the worst. You smell dead animal. These were higher end restaurants.

We have oil quality standers. We filter and clean the fryer daily and change the oil when visibility gets too low and food quality and flavor is affeced. Kfc has regular inspections every 3-4 months and re-inspections on poor stores. we change our oil every 2-3 weeks and there is no danger of mold or sikness. oil heats up to 330F. If the oil is old you would definatly notice it in the flavor of your food. If it tastes good its good oil. Ever notice sometime MCd fries look brown and sometime there bright white. Brown fries are from oil near the end of it cycle.

And the gravy is instant, just like the stuff you buy in the grocery store

Must admit I love KFC but always makes me sick. Went to a bar as a kid they had the best fried chicken ever. Kind of peppery. Not to be racist but blacks have a way with making awesome fried chicken.

That place needs a visit from the ghost of Colonel Sanders STAT! While he was alive he would make surprized inspections of places and was known to have dumped huge vats of chicken and gravy on the floor if it did not live up to his standards.
