But, you must remember that Vader didnt know who he was as Anakin.
Functioning as Anakin, he would hide secrets, laugh, love, and perform human function under the watchful and guided hand of those with whom he was in complete service to. Anakin was literally raised by the jedi and the entire council before his own personal fears and tragedy would push him towards his destiny to be Vader.

Anakin honestly thought of himself as a good guy. A more omniscient point of view could easily see that his descent to the dark side was almost a certainty. However, he himself is not omniscient. And when he fell, he didnt even see it coming.
