What that means is that sometime in late January consumers may see milk prices double from approximately $3.50 per gallon to $7.00 per gallon, although cheese prices may begin to rise almost immediately. A rise in milk prices would likely lag behind cheese prices because most major purchases of milk at the wholesale level have already been made for January, but cheese has a longer shelf life meaning that some producers may delay bringing their products to market to capitalize on higher prices.
