Because some people may try to dehydrate meat with fat and not realize that it will spoil, see:

It is possible to can lard and so you can have both dehydrated meals in jars and then add that lard back in. See my sig for a detailed method of canning lard. It's not for beginners. If you tried to dehydrate ground beef, then you'd drain off the fat and lose all those valuable calories, and that might be the difference in starving or not.
